Dreamy Roasted Tomato and Pesto Burrata Pasta
If you love all things pesto and pasta then you are absolutely going to be in love with this Roasted Tomato and Pesto burrata Pasta! It has everything you could ever dream up in a pasta dish and I gurantee it will blow your mind.

We just recently had dinner at one of our favorite Italian restaurants and as soon as I took my first bite of pasta, I knew I needed to recreate this dish at home! It was a pesto burata pasta that was rich, creamy, slightly sweet and had such incredible depth of flavor.
You guys know we love our sourdough pasta in this house so that is what I started this recipe with. I then made a homemade pesto with toasted pinenuts and fresh basil from the graden. The special touch to this Roasted Tomato and Pesto Burrata Pasta is then roasting cherry tomatoes with blasamic glaze to bring in a deep, sweet flavor to compliment the pesto.
Once the pasta is tender, I tossed it together with the fresh pesto and juicy roased tomatoes, then toped it all with a creamy ball of burrata cheese…..I really hope youre drooling by now!!! This pasta is everything I hoped it would be and more and it is sure to be ahit with anyone you serve it to.

Tips for Making Tomato and Pesto Burrata PAsta

- Make a homemade pesto instead of a store bought one. While you can absolutely make this pasta with store bought peso to save some time, you truly cannot beat the flavor of making it fresh and homemade.
- Be sue to roast the tomatoes long enough so then get nice and caramelized ith the balsamic vinegar. This adds such a great sweetness to this past, which truly is my favorite part.
Roasted Tomao and Pesto Burrata Pasta Ingredients
Pasta– You an use any pasta shape you like for this recipe and as stated aove, I ecommend either buying fres pasta or making it homemade for the best quality dish.
Basil– This recipe uses a good amount of fresh basil to make a flavor packed pesto.
Garlic– Fresh garlic is a necessity in any pesto.
Pine Nuts– These get toasted then added to the pesto for a rich, creamy and nutty flavor.
Parmesan Cheese– Every good pesto needs some good quality parmesan cheese. Opt for freshly grated if possible.
Oive oil– This is what brings the pesto together into a nice sauce.
Cherry Tomatoes– I like these over bigger tomatoes for this recipe so you can keep them whole.
Balsamic Glaze– This is added to the tomatoes before roasting to give a sweet and caramelized flavor. You can sub with regular balsamic vinegar if you do not have balsamic glaze.
Burrata Cheese– Adding this on top of the pasta, ring a light and creamy component that turly is the cherry on top to this pasta dish.

The Steps
1.Start by preheating your oven to 410F.
2. Add the cherry tomatoes to a baking sheet then toss with 2-3 tbsp olive oil, salt, pepper and 3 tbsp balsamic glaze. Roast in the oven for about 20-25 minutes or until the tomatoes are nice and caramelized.
3. While the tomatoes are cooking, boil the pasta and make the pesto. Start by adding the pinenuts to a dry frying pan and cook on medium heat for just a couple minutes to get them toasted.
4. Once the nuts are toasted, add them along with the basil, garlic, parmesan, 2/3 cup olive oil, lemon juice and 1/2 tsp of salt to a food processor or blender. Blend until smooth.
5. Finally, drain the cooked pasta then add it back to the hot pan along with about 1/3 cup of the pesto and the whole pan of roasted tomatoes, and all the juices.
6. Toss the pasta well to get the sauces evenly coating the pasta.
7. Serve immediatley with a wedge of the burrata cheese on top and some grilled chicken. Enjoy!
