This banana bread is soft, tender, and incredibly flavorful from both the browned butter and sourdough inclusions! It might just be the best banana bread you ever make ;).

If you are wanting to get back to baing in the kitchen but are not quite ready for full on pumpkin, I think banana bread is the perfect choice! You get all those warm and cozy spices but in a recipe you can make all year round.
When I tell you this Brown Butter Sourdough Banana Bread might just be the best you ever have, it is because of these few key componenets. First of all, the brown butter! If you have never baked with brown butter, it is extremely easy and adds a rich, caralemized nutty flavor that is to die for. Then you have the addition of sourdough discard which adds that sourdough flavor you love in a subtle way. Finally, is that addition of both cinnamon and nutmeg. I think it should be illegal to make banana bread without nutmeg because they are truly a match made in heaven!
This recipe is incredibly simple to make and you don’t even need a mixer. It can be thrown together and in the oven in under 20 minutes! While it is always best warm, sraight from the oven, this is a great recipe to batch make and store in the freezer. Slice it up, and store in the freezer for up to a month for easy grab n go snacks!

Tips For PErfect Brown Butter Sourdough Banana Bread
- Use an inactive sourdough discard for this recipe. Because there are other leavening agents in this banana bread, you want to use discard that is just going to add flavor and not rise. This ensures that a nice tender crumb is achieved.
- When browning your butter, do not walk away from it. It will take a few minutes to get fully brown but you want to make sure it doesnt just burn. WAtch it closely as the milk solids separate and the butter becomes rich and golden.
- Never over mix your batter. With any type of quick bread you want to make sure you mix he batter just until combined. This avoids a tough texture and gives you that soft crumb you want.
Brown Butter Sourdough Banana Bread Ingredients
Sourdough Discard– This recipe uses an inactive sourdough discard to add flavor to the bread.
Butter– As the title states, you will be browning this butter for an extra rich and caramlized flavor.
Egg– Eggs are essential as a binder to help hold your batter together.
Milk– You can use any dairy imlk you like. Whole milk is always my first choice for ultimate flavor.
Sour Cream– There is just a touch in this recipe. You can sub with greek yogurt if you prefer.
Banana– As always, you want to use nice a over ripe bananas for banana bread.
Maple Syrup– I cut the sugar in this recipe a fair bit and replace some of it with maple syrup. This enhances that rich caramelized flavor.
Brown Sugar– Keeping on trend, brown sugar adds a deeper flavor that using white sugar.
Flour– Any all purpose flour will work.
Spices– As mentioned above, cinnamon and nutmeg are a special addition to this banana bread. Do not skip these ;).
Baking Soda– This is the leavening agent in this recipe, so no need to use an active sourdough starter.
Chocolate Chips (optionsl)– While these are completely not necessary, they are a delicious addition.

The Steps
1.Start by preheating your oven to 350F.
2. Next, add the butter to a small pot and place it over medium heat. Cook for about 5-7 minutes. It will get really foamy. Trust the process and once the foam dissappears you will be left with golden browned butter. Remove from the heat.
3. While the butter cools for a couple minutes, whisk together the bananas, sugar, maple syrup, eggs, vanilla and sour cream.
4. Once smooth, slowly whisk in the brown butter.
5. Then, gently fold in the flour, baking soda, and spices. Mix just until the flour is fully incorporated.
6. Lasty, fold in the chocolate chips.
7. Pour the batter into a greased loaf pan and bake for 50-60 minutes of until golden brown and a toothpick inserted in the middle comes out clean.
8. Allow the banana bread for cool for a few minutes before removing from the pan, slicing and enjoying warm with butter!
