Tips for Making Venison Greek Gyros
- Always use ground Venison that is mixed with 10-20% pork. Whether you grind your own game meat, or get it done somewhere, you will always have the best taste and texture when it is mixed with a bit of pork. Venison is extremely lean so adding fat is necessary for flavor and to keep the meat juicy.
- Because Venison is lean, be sure to cook the Venison patties just until the internal temp reaches 165F. This is the temperature that tells you it is done cooking and safe to eat. If you over cook it, there is potenetial for it to become dry.
- While store bought is okay, opt for homemade tzatziki sauce if you can. It is only made with a couple ingredients, and tastes much better homemade. Yogurt, cucumber, garlic and lemon are all you need.
Venison Greek Gyros Ingredients
Sourdough Naan– If you want to make homemade naan, sourdough naan is the BEST but you can also just use storebought.
Ground Venison– This can be ground venison, moose, elk, or even beef. Any ground red meat you have will work.
Eggs– A couple eggs help bid the meat together to form the patties.
Oats– These are soaked in milk and used as a binder and for texture instead of using bread crumbs.
Onion– Red or yellow onion work for the meat, then I recommend raw or pickled red onions for topping.
Garlic– Because you can’t have good Greek food without a ton of garlic!
Spices– The meat patties are full of spices including oegano, rosemary, thyme, cumin, salt and pepper.
Greek Yogurt– This is used as the base of the homemade tzatziki. Make sure you use a plain greek yogurt.
Cucumber– Not only is this one of the best toppings for these gyro, but it is also used in the tzatziki sauce.
Lemon– Always use fresh squeezed lemon juice for optimal flavor.
Tomato-Any kind of tomatoes you have work in these gyros.
Avocado– This is an optional topping, but it adds great creaminess and extra nutrients.

The Steps
1.Preaheat your oven to 400F.
2. Start by adding the oats to a small bowl and soaking them with the milk for about 5 minutes.
3. Next, add the reamining meat ingredients to a large bowl. Gently stir everything together. Add the oat and milk mixture to the meat, and gently mix until evenly incorporated.
4. Line a baking sheet with parchment, then form the meat mixture into long rectangular patties (whatever size will fit the length of your naan nicely) . Place the patties next to each other on the baking sheet and bake for 10-15 minutes or until internal temp reaches 165F.
5. While the meat is cooking, place the grated cucumber in some paper towel and gently squeeze all the liquid out over a sink. Unwrap the paper towel and add the cucumber to a small bowl.
6. To that same bowl, add the remaining tzatziki ingredients and mix well.
7. Finally, take a warm piece of naan, spread a big spoonful of the tzatziki on top, followed by one of the cooked venison patties, sliced cucumber, tomato, avocado, red onion and finish with fresh parsley.
8. Serve immediatley and enjoy!
