Easy & Delicious Sourdough Pasta Asparagus Carbonara

If you make sourdough and have yet to try your hand at sourdough pasta, let this be your sign to do so! This Sourdough Pasta Asparagus Carbonara is one of our absolute favorite pasta dishes because it is so simple to make and incredibly delicious!

Pasta has always been a favorite of ours. When I started my journey to making more food from scratch, I knew pasta had to be on that list. I always thought it would be difficult, but once I purchased a simple pasta sheeter and learned I could make sourdough pasta, it was love at first bite!

You can make this Sourdough Pasta Asparagus Carbonara with any type of pasta, but if you do have sourdough discard, I highly recommend using it. The pasta comes together in jut a few minutes and then can be rolled by hand or using a pasta sheeter. Simply boil it for 5-7 minutes and you have the most delicious fresh pasta.

For the Asparagus Carbonara part of the recipe, you only need a couple ingredients. Carbonara is a simple pasta that comes together with fresh eggs, parmesean cheese and bacon. It is so easy, that you do not even need another pot to make the sauce! Simply combine the ingredients in the pot with your fresh hot pasta and you get a light, creamy pasta that everyone will love!

Tips for PErfect Sourdough PAsta Asparagus Carbonara

  1. Use active sourdough starter or sourdough discard that is not too old. I love that this recipe can be made with sourdough discard, but I always recommend using discard that is not more than 3-4 weeks old from the fridge or it can tend to add a slightly off taste.
  2. Chill the pasta dough for at least 30 minutes before rolling it out. While this is not absolutely necessary, it will hep the pasta dough firm up a bit, making it easier to roll out and work with. You can leave the pasta dough in the fridge for up to 24 hours if you want it to ferment a bit and have a stronger flavor.
  3. Be sure to roll your pasta nice and thin. If you are not using a pasta sheeter, you really want to make sure you spend the time rolling out the dough so it is super thing. This wil give you a much nice bite into the pasta.
  4. When adding the parmesean and egg tothe pasta to make your suace, make sure that the pasta is nice and hot but that the pot is no longer over heat. You want the cheese to be able to melt and the egg to slowly cook and get creamy. If the pot is still on and oo hot, you can end up with scrambled egg texture and you do not want that!
  5. Always reserve a good amount of the salted pasta water before you strain the noodles. Adding pasta water to carbonara is what will loosen up the sauce and give you that silky, creamy texture!

Sourdough PAsta Asparagus Carbonara Ingredients

Bacon– The bacon adds such great flavor to a simple yet delicious pasta recipe. Use any bacon you like. My favorite to use is my homemade rosemary garic bacon. Find the recipe here https://cmbarndominium.com/how-to-make-homemade-rosemary-garlic-bacon/

Asparagus– This isn’t traditionally in carbonara but I love this addition for some crunch and a fresh, summery addition.

Parmesan– Because there are so few ingredients in this pasta, I recommend using the best quality ingredients you can for optimal flavor. Freshly grated parmesan will always give you the best sauce.

Egg– This may seem wird, but egg is what helps create a smooth and creamy sauce in carbonara.

Garlic– I like to add a bit of fresh minced garlic to the bacon and asparagus for a bit of additional flavor in the dish.

Black Pepper– Freshy ground black pepper helps to balance out the richness of the parmesan and give a bit of spice.

The Steps

1. Start by chopping the asparagus and bacon into bie sized pieces. Add the bacon to a skillet and cook on medium heat for a couple minutes.

2. Once the bacon is mostly cooked, add in the chopped aspargus and minced garlic and continue to cook for 2 minutes then remove from heat. I like the aspargus to still be slighty crisp.

3. Next, boil water in a large pot with a generous pinch of salt. Once boiling, add in the pasta and cook for 5-7 minutes or until tender. If you are using store bought pasta it will need to cook a little bit longer.

4. When the pasta is almost done cooking, be sure to remove about 1 cup of the pasta water and set it aside. You will need this to make the sauce.

5. Strain the cooked pasta and place it back into the warm pot but not over any heat.

6. Finally, whisk together the eggs, parmesan and black pepper in a small bowl then pour it over the hot pasta. Gently toss everything together, then slowly add in the pasta water until desired sauce consistency. Start with about 1/2 a cup of the pasta water and toss the pasta well. Add in more pasta water if you need it a bit more saucey.

7. Stir the bacon and asparagus into the pot of pasta, then serve in pasta bowls with a sprinkle of fresh parmesan on top. Enjoy!

Notes

*You can use any bacon that is your favorite for this recipe.

*I like to serve this Pasta with grilled chicken thighs or breasts on top for a well balanced meal.
