The Best sourdough pasta

Sourdough pasta is quite possibly the most delicious pasta to exist. Think soft, fresh pasta with just a hint of sourdough flavour!

If you have never made fresh pasta at home, let this be your sign to do so! It is much easier than you may think and you do not need any fancy gadgets. It can be made in a large batch and stored in the freezer so that you can have homemade pasta in just a few minutes. I always make extra to save time later.

If you are like me and have a gluten sensitivity, this is such a great way to enjoy fresh pasta that may not hurt your tummy. Of course everyone is different but my stomach does well with sourdough bread because of the natural fermentation and this pasta is no different! The dough can be made several days in advance for even better fermentation and flavour.

Sourdough PAsta Ingredients

Flour– There are a few options for flour. All purpose white flour works perfect but 00 flour is even better. This is typical a product of Italy but can be found in some grocery stores or on Amazon.

Sourdough Starter– You can use active starter or discard. I have used both and had amazing results.

Eggs– Any eggs you have will work.

Salt– There is just a pinch of salt in this recipe to enhance those delicious flavours.

the steps

  1. To make the pasta dough, add the flour and salt to a bowl or onto your counter and make a well in the center.
  2. Gently whisk the eggs in a small bowl then pour the eggs and sourdough starter in the well in your flour.
  3. Using a fork gently start to incorporate the wet ingredients into the flour. Continue to stir everything together until it starts to for a dough.
  4. Once the dough has started to come together, use your hands to kneed the dough on the counter until smooth. About 5-10 minutes.
  5. Wrap the dough in plastic wrap and place in the fridge for at least 1 hour or up to 3/4 days. The longer you let it sit in the fridge the more fermented and sour it will be.
  6. When you are ready to cook the pasta, take the dough out of the fridge and divide it into 4 pieces. Flour both sides of each piece and roll the dough out as thin as you can into long sheets. If you have a pasta machine this is where you can put your dough through the machine instead of hand rolling it.
  7. Next, using a pizza cuter or sharp knife slice the dough length wise into whatever width noodles you like. Again if you have a pasta machine you can use this instead of cutting the dough by hand.
  8. Finally bring a pot of salted water to a boil then add the fresh pasta. allow the pasta to cook for 5-6 minutes or until tender. Strain the pasta and use for whatever pasta dish you like!

  • 250g AP flour or 00 flour
  • 2 eggs

Notes

*You can make this dough up to 4 days in advance and keep it in the fridge until you are ready to cook the pasta.

*This pasta is great made in a double or triple batch then placed in the freezer once rolled out and sliced into noodles. Pull them out of the freezer and cook as normal for quick and easy sourdough pasta.
