Apple Brie & Hot Honey Sourdough Pizza

If you love baked brie, then you have to try this Apple Brie & Hot Honey Sourdough Pizza! It is rich, and creamy with a hint, on the most delicious sourdough pizza crust. The perfect Fall pizza!!!

Pizza is a good idea at any time of year, but I love putting a Fall twist on it! This combination of juicy apples, rosemary garlic butter, salty prosciutto and creamy brie cheese is everything you could want this time of year.

This Apple Brie & Hot Honey Sourdough Pizza starts with my classic sourdough pizza crust. You can make this up to a couple days in advance. The crust is then topped with rosemary garlic butter, brie cheese, prosciutto, apples, red onion and hot honey finish it off. It is crispy, chewy, salty and a little sweet. A perfect combination of flavours.

You can customize this pizza in many ways to suit your taste buds but still give you a similar flavour. Try using pear or peach instead of apple. Don’t like prosciutto? Swap it out with your favourite bacon. Not a fan of a little spice? Sub the hot honey with a drizzle of regular honey. No matter which variation you do, I promise it will be a crowd pleaser!

Tips for Making Apple Brie & Hot Honey Sourdough Pizza

  1. Make sure you allow the pizza dough to rest at room temperature for at least a couple hours before shaping. You want the dough to be room temperature so it is nice and pliable.
  2. Do not flour your counter when stretching your pizza dough! If you flour your counter, the dough will have a hard time holding its shape as you stretch it. You want the dough to stick slightly to be able to get it to hold shape.
  3. Because you are adding sliced cheese opposed to grated, make sure that the brie slices aren’t too thick. If they are too thick, it will prevent the crust from cooking properly and getting a nice crisp outside and chew centre.
  4. Baking time on this pizza will vary slightly depending on how hot your oven goes and the type of pan you bake it on. I have found that using a pizza stone the dough takes a bit longer to cook, verdure using a metal baking sheet, the dough gets crispier faster.

Apple Brie & Hot honey Sourdough Pizza Ingredients

Sourdough Pizza Dough– This is a simple pizza dough recipe that makes perfect pizza that has crispy edges and a nice chewy centre.

Brie Cheese– Any type of brie that you like will work for this pizza. Make sure you slice it nice and thin.

Apple– As mentioned above you can use apples or substitute with pear or even peaches!

Prosciutto– This adds the perfect bit of saltiness to balance the creamy cheese and sweet apples. If you don’t have prosciutto you can use bacon.

Red Onion- Thinly sliced red onion adds a nice bit of bite to this pizza.

Garlic Rosemary Butter– Instead of red sauce, this pizza uses a garlic rosemary butter as the “sauce”. It adds the perfect depth of flavour.

Hot Honey– Any type of hot honey you love can be used! If you are not a fan of anything spicy, you can just use regular honey.

The Steps

  1. Start by removing the sourdough pizza dough from the fridge a couple hours before you want to make the pizzas.
  2. Preheat your oven to 475F and flour 2 round or square baking sheets.
  3. Once the dough is room temperature and nice and soft, cut it into 2 equal size pieces.
  4. Using your hands, gently stretch each pieces of dough into your desired pizza shape. DO NOT FLOUR YOUR COUNTER. This is a sticky dough, so it is much better to stretch with your hand than to roll with a rolling pin. I like to stretch it until it is super thin.
  5. Using two sets of hands, gently lift the shaped pizza dough onto the prepared pans.
  6. Next, stir together the softened butter, garlic and rosemary until smooth. Spread a couple tbsps of this butter over each pizza crust.
  7. Then, layer on the prosciutto, brie cheese, apples and red onion. Bake the pizza for 15-20 minutes or until the edges are nicely golden and the cheese is melty and bubbly. This will vary depending on what kind of pan you bake the pizza on, so keep an eye on it!
  8. Finally, remove the pizza from the oven, top with a generous drizzle of hot honey and some more fresh rosemary. Slice each pizza into 8 pieces and enjoy!

Ingredients

  • 1/2 batch of sourdough pizza dough
  • 1/4 cup softened butter
  • 3 cloves garlic minced
  • 1 tbsp fresh chopped rosemary
  • 1/2 a large wheel of brie cheese
  • 1 apple sliced
  • 12 slices of prosciutto
  • 1/3 cup sliced red onion
  • hot honey for topping

Notes

* You can use a 1/2 batch of the pizza dough as recommended in this recipe to make 2 pizzas, or make the full batch of dough which will yield 4 pizzas.

* Pear or peach slices can be substituted for the apple if you like.

* Don't layer the brie cheese too thick on the pizza or the crust wont cook properly. Slice it thin, and just do a single layer on the pizza.

*If you don't like hot honey, use regular honey for less spice.
