The Best Healthy Pumpkin Cookies
We all enjoy a sweet treat this time of year, but sometimes we want something a little more nutritious and these Healthy Pumpkin Cookies are perfect! They are the easiest cookies to make and can be customized to create your perfect cookie.

Tis the season for all things Pumpkin and we aren’t going to stop! I have been making my favourite healthy breakfast cookies for over 15 years now, and it was finally time I made a pumpkin version.
These healthy pumpkin cookies use wholesome ingredients, no refined sugars, are gluten free and can be made dairy free too. What is so great about these cookies is that they are literally fool proof. You can make them any size you like, switch out the add ins and make them just how you want. I promise, they will turn out delicious every time.
I love to make these cookies on the regular, and keep some in my freezer at all times. They are delicious as a light breakfast with coffee, an afternoon or school snack or even with a cup of tea before bed. You can enjoy these cookies whenever you want and know that you are feeling your body with nourishing ingredients!

Tips for Making Perfect Healthy Pumpkin Cookies
- Use pure pumpkin puree and not pumpkin pie filling. They are sold next to each other in cans and if you buy pumpkin pie filling it will have a bunch of added spices and sugar that you don’t want.
- Taste the batter as you go and add additional maple syrup if needed to reach your desired sweetness. I like these cookies a little on the less sweet side but if you want more, by all means make them a bit sweeter.
- Bake them at 325F instead of 350F. This ensure the cookies don’t get crispy and stay nice and soft.
Healthy Pumpkin Cookie Ingredients
Pumpkin– As mentioned above, make sure you use pure pumpkin puree and not pumpkin pie filling.
Almond Butter– This is the base that helps hold the cookies together. If you don’t like almond butter you can sub with something like cashew butter.
Maple Syrup– The sweetener of choice in these cookies that adds a nice rich subtle sweetness.
Oats– Whole rolled oats are best for these cookies.
Chia Seeds– These are mainly included for nutrients, but also help bind the cookies. You can sub with flaxseed if you prefer.
Chocolate Chips– While these aren’t necessary, the combo of the pumpkin and chocolate is delicious. Any type of chocolate you love will work.
Nuts– Pick any nut or seed that you like. Walnuts, pecans, pumpkin seeds, almonds. Whichever you like.
Pumpkin Pie Spice– You can find this already made at most grocery stores or make it at home.
Cinnamon– There is a little extra cinnamon added for some extra warmth and spice.
Dates/Raisins– These are completely optional, but I love either of these for a bit of sweet chewy goodness in these pumpkin cookies.

The Steps
- Preheat your oven to 325F.
- Start by lining a baking sheet with parchment paper.
- Next, add the almond butter, pumpkin and maple syrup to a large bowl. Mix until smooth with a spoon or with a stand mixer.
- Then, add in all of the remaining ingredients and mix until you have a thick cookie dough mixture.
- Spoon the cookies into 12-16 balls (or more if you want small cookies) then place the balls on the baking sheets and flatten them to about 1/2 inch thick. These cookies won’t spread so you can place them close to each other.
- Bake the cookies for 12-15 minutes.
- Remove from the oven and allow to cool for a couple minutes before enjoying!
