Easy Venison Breakfast Sausage Rolls
You all LOVED my venison sausage rolls so I wanted to make Breakfast Venison Sausage Rolls and these did not disappoint! They are buttery, salty, cheesy and made even more perfect dipped in warm hollandaise sauce!

If you love a good sausage roll and you hunt, then you have to be making them with your wild game meat. They are easy to do, and are the perfect, tasty snack for anytime of day! Grab whatever ground game meat you have, because these are a must make!
To make these Venison Sausage Rolls a breakfast version, I added crispy bacon and onions to the filling and also stuffed them with sharp cheddar cheese. They turn out so flavourful, buttery and delicious and when you dip them in a side of hollandaise sauce they are EVEN BETTER!
You can serve the Venison Breakfast Sausage Rolls as breakfast, a snack or even a fun appetizer for the holidays. You can make them ahead of time and freeze them for convenience. Simply reheat them in the oven to get flaky and hot and enjoy.

Tips for Making Venison Breakfast Sausage Rolls
- Use a ground game meat with 10-20% pork or beef. We add 15% pork shoulder to all of our ground meat which helps with flavor and moisture.
- Make sure not to over stuff the pastry when you are. making the sausage rolls. You want to get a nice seal along the edges of the pastry so that they don’t open and burst. I like to crimp my edges with a fork to keep them sealed.
- The cheese in these, will melt while baking and spill out. There’s no avoiding it but the cheese gets kind of crispy as it spills out and its delicious. Right when they come out of the oven, I just use a spatula to gently push the melted cheese into the edge of the sausage rolls and then the cheese stays attached.
Venison Breakfast Sausage Roll Ingredients
Ground Venison– You can make these with ground venison or any other ground wild game you have.
Bacon– I like a slightly thicker cut bacon for these but use whichever bacon you like. A maple bacon is also delicious for a little extra flavor.
Onion– Red or yellow onion is fine for these. Just a small amount is used to add a touch of flavor.
Garlic– Fresh garlic as always is best for the most flavour.
Cheddar Cheese– You can use any kind of cheddar cheese you like. I love a nice old cheddar for stronger flavor.
Puff Pastry– This can be a homemade or store bought puff pastry. You want it thawed but still cold so it is easier to work with.
Egg– You need an egg in the meat mixture to act as a binder, as well as for an egg wash to give you that beautiful golden color on the pastry.
Chili Flakes– Optional, but these add a subtle little kick.
Hollandaise Sauce– While these sausage rolls are delicious on their own, I highly recommend enjoying them dipped in hollandaise sauce.

The Steps
- Preheat your oven to 400F and line a couple baking sheets with parchment.
- Then, start by dicing up the bacon and adding it to a frying pan. Cook for a couple minutes, then add in the onion and cook over medium heat until the bacon starts to get crispy.
- Next, add the ground meat, garlic, salt & pepper, chili flakes and 1 egg to a bowl.
- Stir the mixture together until well combined, then add in the cooked onions and bacon and stir. I like to scrape a little bit of the bacon fat in as well to make it extra juicy and tender.
- Then, take the puff pastry and lay in on a floured surface. Cut it in half so you have 2 pieces about 4-5 inches wide.
- Take some of the meat mixture and lay it along one side of the pastry in a log shape about 1/2 an inch thick.
- Next, lay slices of cheese on top of the meat all the way along.
- Whisk together the 2 egg yolks and 1 tbsp of milk to form an egg wash, then brush it along one edge of the pastry.
- Fold the pastry over the meat and seal it together at the seam, crimping it with a fork all the way along. Repeat this process, filling all of the pastry.
- Use a sharp knife and slice the rolls into sausage rolls a couple inches wide.
- Place them on the prepared baking sheet and brush the tops of them with the remaining egg wash.
- Bake for 20-25 minutes or until the pastry is nice golden brown.
- Serve warm dipped in hollandaise sauce and enjoy!

These were incredible! I had only purchased one 280g puff pastry so mine were a little thicker and had to be cooked a bit longer, but they were so yummy. We had already made breakfast sausage with my hubby’s last deer so I didn’t even need to add the garlic or spices because they were already mixed in. We made this hollandaise sauce which I would echo is key to making this as yummy as possible!
