How to Make The Best Venison Reuben Sandwiches

We are deep in hunting season and making a Venison Reuben Sandwich needs to be on your to do list with all that meat you are harvesting! These sandwiches are full of flavor, made with homemade venison pastrami and honey molasses sourdough bread.

We all love finding new and delicious ways to use wild game meat and making homemade pastrami with it has quickly become a favourite in our house. It is easy to make, full of flavor and a great way to use those less desirable cuts! I promise you will become addicted.

Once you have pastrami made, that’s where you get to turn it into the most insanely delicious Venison Reuben Sandwich. This sandwich starts with a soft and buttery, homemade honey molasses sourdough sandwich bread. Then it is gets topped with Swiss cheese and toasted to perfection. Slather on a homemade Russian dressing, a heaping pile of venison pastrami and finish it off with sauerkraut.

Now, this sandwich isn’t a one size fits all. You can customize it to be exactly how you like. While we love using game meat (moose is our favourite) you can even use beef for the pastrami. If you aren’t a sourdough baker, then you can make a nice loaf of molasses or rye bread or even buy a loaf from a bakery! Whichever variation of this sandwich you make, it will be a winner no doubt!!!

Tips for Making Perfect Venison Reuben Sandwiches

  1. Use fresh, homemade pastrami. It may seem daunting if you have never done it, but I promise it is so easy to make. You can use any type of wild game meat you have or even beef if you don’t hunt.
  2. Build this sandwich on a homemade sourdough molasses bread. I am telling you, the subtle sweetness and enhanced flavor from the molasses is an incredible pairing with the venison pastrami.
  3. Don’t be shy about the toppings. Pile on the meat, Swiss cheese, Russian dressing and sauerkraut nice a thick. No one wants a sandwich with hardly any filling!

Venison Reuben Sandwich Ingredients

Swiss Cheese– This is the cheese that is traditionally found on a Reuben sandwich. It is creamy, rich and slightly sweet.

Russian Dressing– A delicious spiced sauce made from mayo, horseradish, garlic, onion and spices. Do not skip this!

Sauerkraut– A classic component of a reuben sandwich that adds crunch and a bit of tang. You can use store-bought or homemade.

Honey Molasses Sourdough– Traditionally a Reuben Sandwich is made on rye bread, but I think the light sweetness and rich flavor from a molasses bread is insanely good with this sandwich. You can use rye if you want though.

The Steps

  1. Start by turning your oven to broil.
  2. Grab a small bowl and stir together all of the Russian dressing ingredients until smooth.
  3. Next, place the slices of bread on a baking sheet and broil the one side until desired goldenness.
  4. Then, flip the bread over, add a couple slices of swiss cheese to half of the bread slices and place back under the broiler to melt the cheese and toast the other size of bread.
  5. Once gooey, and toasted, spread a generous spoonful of Russian dressing on the plain pieces of toasted bread.
  6. Finally, pile on as much venison pastrami as you want, on top of the melted swiss cheese, then add about 1/3 cup of sauerkraut on top.
  7. Place the dressing side of the bread on top, slice each sandwich in half and enjoy!

Soft homemade honey molasses sourdough, piled high with venison pastrami, swiss cheese, sauerkraut and a homemade russian dressing. The ultimate Reueben Sandwich.

Ingredients

For the Russian Dressing

  • 1/4 cup mayonnaise
  • 1 tsp lemon juice
  • 1 1/2 tsp chili paste
  • 2 tsp creamy horseradish
  • 1 clove garlic minced
  • 1/2 tsp Worcestershire sauce
  • 1 tbsp onion finely minced
  • 1/4 tsp smoked paprika
  • pinch of salt & pepper

Instructions

  1. Start by turning your oven to broil.

Notes

* You do not have to use homemade pastrami or wild game pastrami. You can make your own beef pastrami or even buy store bought!

* If you don't like molasses bread, this sandwich is also delicious on rye sourdough or just regular sourdough bread. I highly recommend trying it with the molasses bread though.

*If you prefer to grill your sandwich like a grilled cheese, you can also do that in a frying pan. Just butter the outside of the bread and cook as you would a grilled cheese.
