The Most Soft & Fluffy Garlic Herb Sourdough Rolls
Dinner rolls are a staple recipe we all need, especially for soup season and these Garlic Herb Sourdough Rolls may just be the most perfect dinner rolls ever….They are insanely light and fluffy, with perfect golden, buttery tops. Everyone will be going in for a second one 😉

A good dinner roll is a must have in your arsenal of recipes if you make bread at home. They can be enjoyed along side almost any meal, are perfect for holiday season, and are a delicious vessel to soak up any soup or saucy goodness.
These Garlic Herb Sourdough Rolls start with a simple dough full of milk, butter and eggs. All of which help build delicious flavor and melt in your mouth texture. You let the dough rise, then shape it into whatever size or shape rolls you like. Place them in the fridge until you are ready to bake them, then brush them with garlic herb butter and bake until golden. They come out perfect every time!
If you are feeding crowds, this recipe can easily be doubled. You can store the baked buns in the freezer and simply reheat in the oven before serving. Want to keep them more neutral? You can brush them with plain butter or a honey butter instead! A recipe made for everyone.

Tips for Making Garlic Herb Sourdough Rolls
- Feed your starter a 1:4:4 ratio about 8-10 hours before making the dough. This is the ideal ratio to build a nice and strong starter that will give you beautifully risen buns.
- Make sure you knead the dough for at least 6-8 minutes. Whether you are doing this with a stand mixer or by hand, you will notice the dough become more smooth and less sticky as you knead. This is building structure in your buns as there is no stretch and folds required for this recipe.
- Always allow your buns a good couple hours for a final rise before baking. When you shape them, you are taking some of the air out, so you want to give them ample time to get nice and puffy again before you bake them.
Garlic Herb Sourdough Roll Ingredients
Sourdough Starter– As mentioned above you want a nice strong starter that was fed a 1:4:4 ratio before using.
Milk– Using milk instead of water for the liquid in this recipes helps add more flavor and tenderness to the buns.
Butter– You can use salted or unsalted butter. I always use salted but use whichever you prefer.
Eggs– These will help keep the dough tender, and give a nice golden top.
Flour– Use whichever type of flour you usually use for your sourdough bread. Unbleached all purpose flour or bread flour.
Sugar– Just a touch of sugar is used in the dough.
Salt- Any fine salt will work.
Garlic Herb Butter– This is a simple mix of melted butter, fresh garlic, rosemary and parsley. You can do plain melted butter if you like or a honey butter.

The Steps
- Start by whisking together the milk, sourdough starter, egg, butter, and sugar in a large bowl.
- Next, add in the flour and salt. Stir by hand or with a stand mixer fitted with a dough hook attachment.
- Once the dough is fully mixed with no dry spots left, allow the dough to knead in the mixer for 6-8 minutes or knead by hand for 8 minutes. The dough will seem super soft and sticky. This is what you want.
- Place the dough in a large bowl and cover with a damp tea towel. Allow it to rise at room temperature for about 6 hours. You want the dough to double in size.


- After your dough has risen, dump it out onto a clean surface.
- Cut the dough into 20 pieces (roughly 85g per piece). Take each piece of dough and pull the sides underneath to create a round, smooth bun shape. Repeat this will every piece of dough.
- Place the dough balls side by side on a baking sheet lined with parchment .You can place them in any shape you like. You can see in the photos I made a Christmas tree for holiday season.

- Cover the pan of buns with plastic wrap and place in the refrigerator over night or up to 24 hours.
- A couple hours before you want to bake the buns, remove them from the refrigerator and let them rise in a warm place for 3 hours. They should get nice and fluffy.

- Preheat your oven to 350F.
- Finally, stir together all of the garlic herb butter ingredients, then brush it over the risen buns, reserving some of it for after baking.
- Bake the buns for 25 minutes or until golden brown on top.
- Brush the remaining butter over the buns as soon as they come out of the oven.
- Allow the buns to cool for just a couple minutes, then enjoy!

Freeze the baked buns air tight, then reheat in the oven before serving. * IF you would like to skip the garlic herb butter, you can use just plain melted butter or add a couple tsp of honey for a honey butter.
