Healthy Meaty Cheesy Egg Bites
This time of year, we are all looking for easy healthy recipes and these Meaty Cheesy Egg Bites are perfect! They are incredibly easy to make, full of protein and healthy fats and make a great on the go breakfast, or lunch.

We love Starbucks egg bites in this house but you know we will always make something at home if we can so we know what is going into it! I have recreated a version of the bacon egg bites we all love but with the addition or ground venison and som extra flavor enhancers.
To make these meaty cheesy egg bites, you start by simply blending eggs with cottage cheese until smooth. Then, you fry up some bacon with your ground venison (or other ground meat) and spices and lay that in the bottom of a muffin tin. Sprinkle some freshly grate gruyere cheese on top, then pour in the egg mixture. Bake them until set and lightly golden and you have a delicious high protein snack.
Of course, you don’t have to use ground venison and could swap it for ground beef, pork or turkey in you prefer. These are great make ahead breakfast/ snack to keep in the fridge for the week or even freeze for home cooked breakfast on the go. You can swap out any of the add ins to be exactly want you want, and I promise you will love these!

Tips for Making Perfect Meaty Cheesy Egg Bites
- Make sure you use a good blender for the eggs and cottage cheese so that the mixture can get nice and smooth. This will give you that creamy, fluffy texture we are looking for.
- You want to grease the muffins tins well or your egg bites with be difficult to get out after baking. I like to use an avocado oil spray for mine.
- Try to give the egg bites 5-10 minutes to cool and set in the pan before you try to remove them. This will ensure that they don’t fall apart when you are taking them out and that they are fully set all the way through.
Meaty Cheesy Egg Bites Ingredients
Eggs– Use any kind of eggs you like.
Cottage Cheese- You can use low fat, 2% or full fat cottage cheese.
Ground Venison– We use ground venison but if you do not hunt you can use ground beef, pork or turkey.
Bacon– I like using a nice thick cut bacon. Homemade or store-bought works.
Gruyere Cheese– This is my cheese of choice as it gets nice and creamy and has delicious flavor but you can use cheddar, or mozzarella if you prefer.
Garlic– Fresh garlic adds a nice enhanced flavor to the meat.
Dried Sage– You can use fresh or dried. Both will be delicious.
Chili Flakes– Optional, but add a very subtle kick.
Green Onions– I like to sprinkle these on top for some fresh flavor and color.

The Steps
- Preheat your oven to 350F.
- Start by adding the eggs, cottage cheese, salt & pepper to a blender and blend until smooth.
- Next, chop the bacon and fry it up in a skillet until golden.
- Once the bacon is cooked, add in the ground meat, garlic, sage, chili flakes and a pinch of salt and pepper. Cook this mixture over medium heat until the meat is cooked through and nice and crumbly. Remove from heat.
- Then you are going to grease 16 muffin cups.
- Take a spoonful of the meat mixture and place one spoonful in the bottom of each muffin cup.
- Next, sprinkle some of the gruyere cheese in each one, over top of the meat.
- Finally, pour the egg mixture evenly into the muffin cups, and sprinkle each one with some green onions.
- Take a rimmed baking sheet or casserole dish and place it in the bottom of your oven. Add about an inch of boiling water to it while it is in the oven.
- Then, place the egg bites on the middle rack of your oven, so that they are above the steam from the baking sheet of water.
- Bake for 25 minutes or until set and lightly starting to golden.
- Allow the egg bites to cool in the pan for 5-10 minutes, before removing and enjoying!
