The Best, Easy & Healthy Protein Bites

If you are looking for a sweet snack to enjoy that also helps you get in some more protein, these Healthy Protein Bites are perfect! They are loaded with real ingredients, packed with nutrients, are gluten free, and can be made dairy free.

When I tell you, that I have been eating these helathy protein bites every morning for years, I am not kidding! I am not sure about you, but I never feel ready for a big meal first thing. Having a couple of these to enjoy with your morning coffee is the perfect way to start your day with protein, fiber, and a tasty little treat.

I make these protein bites with a plant based protein powder because my stomach does not do well with whey, so you can use whichever plant based protein is your favorite. They are as simple as adding all of the ingredients to a bowl, mixing them up and baking!

You can enjoy these little bites for breakfast, a mid morning snack or as a healthy little desert. The different mix ins can be customized to any of your favorite nuts, seeds, chooclate or dried fruit. I like to make a batch of these at the beginning of every week and store them in my freezer for quick grab n go protein snacks!

Healthy Protein Bites Ingredients

Peanut Butter– I find that peanut butter helps disguise the flavor of plant based protein powders really well but you can use any nut butter you like.

Chia Seeds– These get mixed with water and added to the dough for texture and extra fiber and omega 3s.

Plant Based Protein Powder- You can use whichever plant based protein powder is your favorite, but this recipe will not work with whey protein. This is the protein I use and love https://amzn.to/4cQ9dVD

Maple Syrup- There is just a touch added for a bite of sweetness. Honey works too.

Shredded Coconut– I like to use unsweetened shredded coconut for less sugar.

Almond Flour– This is the flour of choice to keep them gluten free and give a nice soft texture.

Oats– Rolled oats add some more fiber, texture and flavor to these protein bites.

Chocolate Chips– Any chocolate chips that you like will work. I prefer dark chocolate or semi sweet chocolate for this recipe.

Dates- I include some chopped dates because they add great flavor and chewyness. They are also packed with healthy benefits.

Nuts or Seeds– You can add in any chopped nuts or seeds that you like. My favorites to include are pumpkin seeds, walnuts or pecans.

Cinnamon– This compliments all of the other flavors perfectly.

Baking soda-A slight levener for these bites tht also helps with texture.

Milk– Any kind of milk will work. Use oat milk or a nut milk if you need dairy free, or ou can use cows milk for extra protein.

The Steps

1.Peheat your oen to 350F and grease a 24 count mini muffin tin.

2. To a large bowl, add the chia seeds and 1/3 cup water. Gently stir and let sit for 5 minutes or until jelly.

3. Next, add the remaining ingredients to the bowl and stir until well combined. You can do this with an electric mixer or with a spoon. If I do not use my mixer, I like to use my hands as it is a thick dough.

4. Bake the bites in the center of the oven for 7-10 minutes. This doesn’t have to be exact, you just want them to be set and more firm to the touch.

5. Allow them to cool before removing from the muffin tin then store in the freezer and enjoy whenever you want a sweet snack!

Healthy Protein Bites

Soft peanut butter protein bites packed with coconut, nuts, dates and chocolate. Easy, healthy and full of fiber and nutrients! Perfect with coffee or for an afternoon snack. GF and DF option.

Ingredients

  • 1 cup natural peanut butter or other nut butter
  • 1/3 cup chia seeds
  • 3/4 cup milk or non dairy milk
  • 1 cup vanilla plant based protein powder
  • 3-4 tbsp maple syrup
  • 3/4 cup unsweetened shredded coconut
  • 1 cup almond flour
  • 1 cup rolled oats
  • 1/2 cup chopped dates
  • 1/3 cup chocolate chips
  • 1/2 cup chopped nuts or pumpkin seeds
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • pinch of salt

Instructions

Notes

*Any nut butter works for these as long as it is a natural nut butter without extra added ingredients.

*You can swap out the dates, coconut and nuts with any nuts or dried fruit you like.

*I lke to eat these when they are cold and enjoy them with a hot cup or coffee or as a desert with a cup of tea.

*You can use any plant based protein that you like, just do not use whey. I have linked my favorite plant based protein that I always use!

  1. Thank you for the recipe ! I really enjoyed these. I ended up using collagen for protein as I also am not a huge fan of the taste of vegan protein in baking lol. Wondering about a nut free option for the almond flour ?

    1. both! If they are straight from the freezer, I like to dip them in hot coffee otherwise I just let them thaw for a couple minutes. I like them cold!

  2. Loveeeeeeee these!! So does my husband! They are his number 1 request for our meal prep, rather than make them in the mini muffin Tin we prefer them smashed down a bit baked like a cookie!

    They are my favourite post or pre workout snack! Love them a little frozen!
