Easy, Cheesy Venison Breakfast Bake

Breakfast bakes are a perfect make ahead dish for the holidays and this Cheesy Venison Breakfast bake is a great way to bring your wild game meat into breakfast! It is so easy to make, full of classic warming flavours and made with nourishing ingredients!

Whether you are looking for delicious meals to serve over the holidays or just love an easy make ahead breakfast, this Cheesy Venison Breakfast Bake is for you! We all love Venison for dinner, but using your wild game meat for breakfast, is even better ;).

This recipe starts with tender cooked potatoes as the base. We use potatoes here instead of hash browns to keep it minimally processed without extra oils. Then, you cook up your ground venison or other game meat with some spices and fresh sage for a classic breakfast sausage taste. Sprinkle that over the potatoes with layers of grey cheese, sharp cheddar and eggs to tie it all together.

If you are looking to make this breakfast bake for the holidays you can make the whole thing ahead of time! Simply freeze it as it, then warm it in the oven before serving and enjoy! I love to serve this breakfast topped with fresh salsa, hot sauce or even a bit of ketchup. Add some fresh sourdough or fruit on the side and you have a perfect brunch for Christmas morning or any morning for that matter!

Tips for Making Cheesy Breakfast Venison Bake

  1. For the potatoes, I recommend boiling them slightly undercooked. This was they still stay firm when baked in the oven and don’t get over cook. Just boil them until you can get a fork in them but they aren’t completely soft yet.
  2. Once you have your potatoes boiled and strained, lay them out on a pan or plate and gently pat them dry with a paper towel. This helps get rid of some of the extra moisture and prevents them from getting soggy in the casserole.
  3. Be sure to cover the venison breakfast bake for the first half of the baking time. You can use foil or I like to just place a baking sheet over top. This will allow it enough time to cook through without burning on top.

Cheesy Venison Breakfast Bake Ingredients

Ground Venison– You can use ground venison or any other ground wild game meat you have for this recipe. Even ground beef would be delicious.

Potatoes– I like to use something like a Yukon gold potato for their smooth buttery texture but you could also use russet potatoes.

Cheese– This breakfast bake uses a combination of both sharp cheddar and gruyere cheese for a rich and flavourful taste.

Eggs– Any eggs you have will work.

Garlic- Use fresh minced garlic over pre mined garlic.

Onion– White or yellow onion is best in this recipe.

Sage– Fresh chopped sage gives the venison a classic comforting breakfast sausage taste.

Milk– This gets added to the eggs for a light and smooth texture. 2% or whole milk are best.

Chili Flakes- These are optional but add a nice subtle kick and bit of flavor.

The Steps

  1. Preheat your oven to 375F.
  2. Then, start by peeling and dicing the potatoes into small bite sized cubes.
  3. Add the potatoes to a pot with salted water and boil just unitl fork tender. You want to keep these closer to under cooked and still a bit firm. They will continue to soften as they bake in the casserole.
  4. Once the potatoes are cooked, strain them and place them on a baking sheet to pat dry with paper towel. This just helps remove some of that excess moisture to keep them from going mushy in the breakfast bake.
  5. Next, add the diced onion to a pan with a couple tbsp of butter or oil.
  6. Cook over medium heat for a couple minutes, then add in the minced garlic and cook for another 2 minutes.
  7. Then, add in the ground venison to the pan and brown the meat until fully cooked through.
  8. Season the meat with the chopped sage, salt, pepper and chili flakes, then remove from heat.
  9. Finally, whisk together the eggs, milk, 1/2 tsp each salt & pepper and chili flakes if using.
  10. Grease a 9×13 casserole dish, then spread the cooked, dried potatoes over the bottom. Add the venison on top spreading it out evenly.
  11. Next, sprinkle 2/3 of both the cheddar cheese and gruyere cheese over the venison, followed by pouring the egg mixture over top.
  12. Add the remaining cheese on top of the casserole, then bake covered with foil for 20 minutes, uncover and bake for another 25 minutes.
  13. Serve warm with salsa or ketchup and enjoy!

Cheesy Venison Breakfast Bake

This is an easy and delicious breakfast bake full of venison breakfast sauce, tender potatoes, flavorful gruyere cheese and eggs. A perfect make a head breakfast for the holidays!

Ingredients

  • 4 medium sized Yukon gold potatoes
  • 1 cup shredded gruyere cheese
  • 1 cup shredded sharp cheddar cheese
  • 8 eggs
  • 1 cup milk
  • 1/2 tsp each salt & pepper
  • pinch of chili flakes

For the Venison Sausage

  • 1 1/2 lbs ground venison
  • 1/2 white onion finely dices
  • 3 cloves fresh minced garlic
  • 1 tbsp fresh chopped sage
  • 1 tsp each salt & pepper
  • 1/2 tsp chili flakes (optional)

Notes

* I like to use yukon gold potatoes for their smooth buttery texture but feel free to use russet potatoes if you prefer.

* This breakfast bake can be made with any ground red meat you have from venison, to beef, to moose or elk etc.

* If you want to make this ahead of time, simple store it in the freezer fully baked and covered. Simply heat in the oven to warm before serving.
