Easy & Delicious Maple Venison Sausage Breakfast Sandwich

We all love a good Venison recipe for dinner but what about breakfast!? This Maple Venison Sausage Breakfast Sandwich is a fun way to use ground meat for breakfast and is insanely good!!

Making breakfast sausage links with game meat, is one of our favourite things to do, however it is a lot of work. I know not everyone has the time or all of the equipment to do that, and that’s why I love this Maple Venison Sausage patty recipe.

These sausage patties are made with ground venison and just a few simple and fresh ingredients. You simply mix together your spices and meat, then fry it up as patties in a skillet and enjoy. They are THAT EASY! You can make this Maple Venison Sausage with almost any large wild game meat. Venison, moose, elk, goat etc are all delicious.

Now, onto the sandwich. Because the sausage patties are so flavourful, I kept the rest of the breakfast sandwich pretty simple. Soft and fluffy sourdough ciabatta buns, sharp cheddar cheese and a couple runny fried eggs. That is all you need for the most incredible breakfast sandwich.

Tips for Making Maple Venison Sausage Breakfast Sandwiches

  1. Ideally, you want to use ground venison or other game meat that has been ground with at least 10% pork or pork fat. We like to add 15% pork shoulder to our ground venison. This adds flavour and ensures the meat has a tender and juicy bite.
  2. When frying up the patties, I recommend using a meat thermometer. It is the most accurate way to get perfectly cooked sausage patties that a cooked enough, but not over done. This results in a juicy patty every time.
  3. Using homemade buns makes these breakfast sandwiches even better! Whether you make sourdough and want to try my sourdough ciabatta bun recipe or just have a favourite homemade bun recipe. Either is great, but homemade will always be the best!

Maple Venison Sausage Breakfast Sandwich Ingredients

Ground Venison– As mentioned above, this can be ground venison or any other ground game meat like elk, or moose.

Garlic– I used fresh minced garlic over garlic powder in this recipe for more of a kick.

Maple Syrup– This is what gives that sweet, maple flavour to the sausage patties.

Rosemary– Be sure to use fresh rosemary. Chop it nice and small for the best texture in your sausage.

Sourdough Ciabatta Buns– These aren’t a must, however I think they are the best buns for these sandwiches. Use any kind of bun you like.

Sharp Cheddar Cheese– I love the strong flavour of a sharp cheddar to balance out the sweetness in the sausage. You could use a mild cheddar if you prefer or even a mozzarella for something more mild.

Eggs– You can’t have a breakfast sandwich without eggs. Soft, runny fried eggs are ideal.

The Steps

  1. Start by mixing together all of the sausage ingredients in a medium size bowl. You can do this with your hands or a large spoon. Mix just until combined.
  2. Then, heat a skillet over medium heat with a tbsp of oil.
  3. Form the meat mixture into 6 roughly even sized patties and place them in the pan.
  4. Cook the sausage patties for about 3-4 minutes per side or until internal temperatures reaches 165F. Find my favorite meat thermometer here https://amzn.to/43a72bW. Remove from heat
  5. .Next, you are going to place a slice of cheese on one half of each bun. Broil the buns until the cheese is melted and the buns are slightly toasted.
  6. Butter the plain side of the bun as soon as it comes out of the oven.
  7. Finally, fry up 1-2 eggs per sandwich, season with salt and pepper and place on each bun along with one of the venison sausage patties.
  8. Serve immediately and enjoy!

Ingredients

For the Sausage

  • 1 1/2 lbs ground venison
  • 2 cloves fresh minced garlic
  • 2 tbsp maple syrup
  • 1 tsp each salt and pepper
  • 1/2 tbsp finely chopped rosemary
  • pinch of chilli flakes

For the Sandwich

Notes

* These sausage patties are delicious made with ground venison, moose, elk or even beef.

* If you want to make a bigger batch of the sausage patties to have on hand, simply double or triple the recipe, then form the meat into paties. Layer the uncooked patties with a piece of parchment between each one, then place in a large zip lock and freeze.

* Sharp cheddar is delicious on these sandwiches but you can also sub with a mild cheddar or even mozzarella for something more subtle.
