Best Ever Venison Lasagna Soup
Soup season is officially in full swing and if you hunt, this Venison Lasagna Soup will be a new staple in your kitchen! It is essentially a lazy way of enjoying lasagna, that is hearty, comforting and absolutely delicious.

I think we can all agree that everyone loves lasagna, but we don’t always have time to make it. That’s why this Venison Lasagna Soup is such a great recipe to have on hand. It is easy to make and comes together in 30 minutes while giving you all the flavours and components you love in lasagna.
With hunting season upon us, now is the perfect time to be saving recipes to make for when the hunts are successful and your freezer is full of meat. Of course the classics like burgers, tacos, and pasta are delicious, but if you want to try something new with your ground meat save this one!
You can use any kinds of large ground game meat you have. Venison, moose, goat, elk etc are all delicious in this soup. Make up a large batch to enjoy all week long or freeze some for later. This even makes a great meal to freeze and take out in the bush with you if you have a camp set up.

Tips for Making Venison Lasagna Soup
- With any of your wild game meat, I always recommend adding at least 10% pork fat or pork shoulder when you grind it. Most butchers will add this already when they do your ground meat, but some do not. Game meat is extremely lean, so adding just a bit of fat produces more flavour, and gives you a juicier, more tender product.
- This soup can be made as more of a thicker, stew like consistency or thiner like a typical soup. The choice is up to you, so adjust the amount of broth you add depending on your preference.
- If you are enjoying this soup as leftovers, it is very normal for the noodles to continue to absorb more of the liquid as time goes on, This just means that you may need to add a bit of water or broth when you reheat it, to get your desired soup consistency again.
Venison LAsagna Soup Ingredients
Ground Venison– As mentioned above, you can used any ground large wild game meat you have. Venison, moose, goat, elk etc.
Crushed Tomatoes– Canned crushed tomatoes are all you need. Store bought or homemade.
Tomato Paste– This helps develop a richer tomato base for your soup.
Lasagna Noodles– Which lasagna noodles you like best with work. You can also sub with a penne or fusilli pasta if you prefer.
Garlic– Use fresh minced garlic over pre minced garlic always.
Onion– White or yellow onion work well for this soup.
Spinach- You can use fresh or frozen spinach in this lasagna soup. If you are using frozen you can add it after you have added the liquid.
Broth– Beef broth or venison broth are perfect for this recipe. You may need to adjust the amount of salt depending on the broth you use.
Italian Seasoning– To keep it simple, we are just using an Italian seasoning blend instead of individual spices.
Fresh Basil– Adding fresh basil at the end, adds a vibrant, fresh flavour to the soup.
Cream– You can use any cream or milk you like. This just gives the soup a touch of creaminess.
Ricotta Cheese– This is a key component to really give you that lasagna taste.
Mozzarella Cheese– A mild creamy cheesy to finish off the soup.

The Steps
- Start by browning the meat in a large pot with a couple tbsp of oil over medium high heat.
- After a couple minutes, add in the onion and garlic. Continue to cook until the onions are tender and the meat is cooked through.
- Next, add in the tomato pasta, italian seasoning, chili flakes, salt & pepper. Stir well to get the tomato paste incorporated.
- Then, add in the spinach and cook for a couple more minutes until wilted.
- Pour in the crushed tomatoes and broth, then allow the soup to come to a boil.
- Once boiling, gently break the lasagna noodles into pieces and add them into the soup.
- Reduce the temperature to low and let the soup cook until the noodles are al dente. About 10 -12 minutes.
- Finally, stir in the cream/milk and 1/2 cup of fresh chopped basil.
- Spoon the soup into bowls, then top with a few spoonfuls of ricotta cheese and some shrdded mozzzarella. Enjoy!
