Quick and Healthy Blackened Chicken Salad with Sweet potato

I love a good, filling salad during the Summer months and this Healthy Blackened Chicken Salad is absolute perfection! It is sweet, spicy, hearty and everything you could want in a salad.

If you are the kind of person who doesn’t like salads, I firmly believe you just haven’t tried the right ones. As soon as the weather heats up, salads with grilled meat are one of our go to week night dinners. They are a great way to use up different produce in your fridge and come together quickly with little mess!

This Healthy Blackened Chicken Salad is filled with vibrant, nourishing ingredients and is bursting with flavor. Fresh greens, crispy roasted sweet potato, creamy avocado, feta cheese, sticky dates all topped with smoky blackened chicken. I am drooling just thinking about this salad.

I love to make simple and fresh dressings for my salads and this one gets a smoky maple dijon vinagarette that is divine! Enjoy this salad fresh for lunch or dinner as a healthy and delicious meal that doesn’ skimp on flavor.

Healthy Blackened Chicken Salad Ingredients

Chicken– You can use chicken thighs or chicken breasts for this salad. Whicher you prefer.

Sweet Potato– I love a combination of yams and japanese sweet potato for color and flavor, but use whichever type is your favorite.

Blackened Seasoning– This a rub you make mixing chili powder, smoked paprika, cayene, onion powder, garlic powder, oregano and salt & pepper.

Romaine Letuce– Romaine is my faovrite for this salad for the light crunch.

Feta Cheese– Crumbled feta adds a perfect salty note to this salad.

Cabbage– Purple cabbage is preferred forthe more mild flavor but green cabbage works too. I like using purple for the added color too.

Avocado– With the spice and salty elements in this salad, avocado is a nice creamy addition.

Dates– I absolutly love adding dates to salads and they are a perfect pairing to the smoky blackened chicken.

Red onion– This is often my first choice for salads for its slightly more mild flavor.

Olive oil– You can use olive oil or avocado oil for the base of the dressing.

Dijon Mustard– Do not sub this with regular yellow mustard.

Maple Syrup– This pairs perfectly with the dijon in this dressing.

Apple Cider Vinegar– I love the flavor this gives but it can be substitued with a red wine vinegar if needed.

Garlic– Every good vinagerette nees some fresh minced garlic. Opt for fresh opposed to pre minced.

The Steps

1.Start by preheating your oven to 400F. Use convection if you have it. Line a baking sheet with parchment, lay the chicken breasts on top and drizzle with some oil.

2. To a small bowl, add the 1/2 tbsp of smoked paprika, through to the 1/2 tsp of salt and pepper. Gently mix the sices together then sprinkle all over both sides of the chicken. Bake the chicken for about 20 minutes or until internal temp reaches 165F.

3. Next, cut the sweet potato into small bite sized cubes. Toss with a drizzle of oil and salt and pepper, then place on a baking sheet and add to the oven to roast for about 20 minutes.

4. While everything is cooking, add all of the dressing ingredients to a jar or small bowl and whisk until well combined. Set aside.

5. Finally, add the romaine lettuce, feta cheese, red onion, avocado, purple cabbage, dates and roasted sweet potato to a large salad bowl. Pour the dressing over top and gently toss until evenly coated.

6. Once the chicken is cooked, slice it thin and serve on top of the salad. Enjoy!

Smoky blackened chicken on a bed of romaines with roasted sweet potato, avocado, salt feta and sweet dates. All topped with a smoky maple dijon vinagarette. Healthy, easy and delicious!

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 tbsp smoked paprika
  • 2 tsp chili powder
  • 1/4 tsp cayenne
  • 1/2 tsp each onion and garlic powder
  • 1/2 tsp oregao
  • 2 sweet potatoes
  • 1/2 tsp salt & pepper
  • For the Salad
  • 1/2 cup feta cheese
  • 1 avocado diced
  • 1/3 cup thincly sliced red onion
  • 1 cup thinly siced purple cabbage
  • 1/2 cup chopped dates
  • 2 heads of romaine lettuce choppec

For the Dressing

  • 3 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 2 tsp maple syrup
  • 2 cloves minced garlic
  • 1/2 tsp smoked paprika
  • pinch of salt & pepper

Notes

*This salad is delicious made with boneless skinless chicken thighs as well!

*If you don't like any spice, just omit the cayenne from the chicken seasoning.
