Rice Noodle Salad With Mango & Avocado AKA the best salad ever
If you think salads suck, well that’s because you have never had this rice noodle salad. This salad is packed with vegetables, mango, avocado, feta and even artichokes. Top it with some juicy seared steak and you have the perfect healthy summer dinner!

When I first started dating my now fiance, he introduced me to this salad and it has been my favorite meal since! It is light, healthy, packed with nutrients and most of all its DELICIOUS.
I love this rice noodle salad because it is a great way to use up all of those vegetables in your fridge. While I would say that some of the ingredients like the mango and avocado are necessities, the rest of the vegetables can be swapped out depending on what you have. The salad comes together with a simple 5 ingredient dressing and crumbled feta. The perfect combo of salty and slightly sweet.
Salads like this one are great for make ahead meals. You can keep this salad, fully made in the fridge for 4-5 days. The flavors just keep getting better! Serve it accompanied by your favorite seared steak or chicken for a perfect balanced meal. I promise, you will have this on repeat all Summer long.

Mango & Avocado Rice Noodle Salad Ingredients
Rice Noodles– You can find these at any grocery store. They come in several different sizes. Any thickness that you prefer with work.
Mango– The mango is the start of the show in this salad. It adds the perfect hint of sweetness!
Avocado– This adds a slightly creamy element to the salad.
Marinated Artichokes– I recommend marinated artichokes in oil for the best flavor. This will add a delicious depth of flavor to the salad.
Feta Cheese– If you do not eat dairy, you can omit this, but I highly recommend it if you can. It is the perfect little salty addition.
Red Onion– Red onion is always the best choice over a white onion in salads for its slightly milder flavor.
Bell Pepper– Any color that you have on hand works. Sometimes I like to do a couple different colors to make the salad even more pretty.
Carrots– I love adding carrots for a bit of crunch in the rice noodle salad.
Cucumber– This just soak up all of the other flavors in the salad. If you are not a fan, you can skip the cucumber.
Olive Oil– I like olive oil in this dressing for additional flavor.
Lemon– Always try to use fresh squeeze lemon juice when you can! This adds such a great tang and freshness to the salad.
Garlic & Ginger– These are are aromatics in this salad dressing. I recommend using fresh minced of both the garlic and ginger.
Sesame Oil– I use this to coat the rice noodles so that the do not stick together. It also adds a bit of extra flavor to the noodles.
Maple Syrup – The final component of the dressing. I add just a touch!

The Steps
1.Start by boiling the rice noodles. I cook them just like traditional pasta. They will only take a couple minutes to cook.
2. Once cooked, strain the noodles and rinse thoroughly with cold water. You want to cool the noodles so they are cold to the touch. Drizzle with 1 tbsp sesame oil and place in a large bowl.
3. Next, add all of the chopped vegetables and mango to the bowl of the noodles. Gently toss everything together.
4. Then, in a small bowl or measuring cup, whisk together the olive oil, lemon, garlic, ginger, maple syrup, salt & pepper, and the remaining tbsp of sesame oil.
5. Pour the dressing over the noodles and toss well to coat. I like to use tongs for this to get everything well mixed.
6. Finally, add in the crumbled feta and toss. Serve this salad cold with grilled steak or chicken and enjoy!
