The Best Healthy Cobb Salad

I am a sucker for a GOOD salad and this Cobb Salad has to be one of my all time favorites. It is fresh, nourishing, and packed with delicious hearty flavor!

As soon as warmer weather hits, we enjoy eating salads at least a couple times a week. That being said, I am not talking about boring garden salads with lettuce and a few vegetables. I am talking anything from mango rice noodle salad, thai peanut salad or this glorious healthy Cobb Salad!

I love this Cobb Salad because it is loaded with healthy fats and protein making it filling and delicious! A Cobb Salad typically contains lettuce, bacon, egg, avocado, tomato and a cheese of some sort. Blue cheese is pretty standard in a Cobb Salad and while I use that sometimes, I also love to make it with feta. It adds a great salty element to compliment all of the creamy fats.

We like to enjoy this salad with grilled chicken or steak on top for a complete balanced and high protein meal. You can prep the bacon, boiled eggs and salad dressing in advance and keep in the fridge. Simply chop the veggies, then add the eggs, bacon and dressing, and toss it all together. This cobb salad is just as great served for lunch as it is for dinner and everyone will love it!

Cobb Salad Ingredients

Lettuce– Romaine lettuce is best for this salad to give that nice fresh crunch.

Eggs– Hard boiled eggs are one of the best parts of this salad. They add heartiness and a creamy taste to the salad.

Avocado– This adds healthy fats and the most amazing creaminess to the salad.

Tomato– Chopped cherry tomatoes or roma tomatoes are delicious in this salad. Use whichever you prefer.

Red Onion– I recommend only using red onion in salads for a nice milder flavor.

Feta Cheese– You will often find blue cheese in a cobb salad and while that is delicious, I really love using feta for some extra saltiness.

Olive Oil– The base of the dressing is olive oil or you can sub with avocado oil.

Red Wine Vinegar– Cobb salad traditionally has a red wine vinegarette but if you don’t have red wine vinegar you can sub with apple cider vinegar. I do this often and it is just as good.

Dijon Mustard– I like to add just a touch of Dijon mustard for some bite in the vinegarette.

Maple Syrup– This can be sustituted with honey if you prefer.

Garlic– Always use fresh minced garlic if you can for optimal flavor!

Lemon– Fresh squeezed lemon juice adds the perfect acidity and freshness to this dressing.

The steps

1. Start by boiling the eggs and frying the bacon. I boil my eggs for about 5-6 minutes then run them under cold water before peeling them.

2. Next, add all of the dressing ingredients to a jar or small bowl and whisk until combined.

3. Grab a large salad plate or bowl and add all of the vegetables and feta cheese to it.

4. Chop the bacon and eggs into small bite sized pieces, then add them to the bowl with the rest of the ingredients.

5. Pour the dressing over the salad and gently toss everything together. Serve immediatley with grilled chicken or steak and enjoy!

The Best Healthy Cobb Salad

A fresh and hearty salad with crisp lettuce, hard boiled eggs, bacon , avocado and feta, dressed with a delicious light vinegarette.

Ingredients

  • 2 heads of romaine lettuce
  • 3 eggs
  • 6-8 slices of maple chili bacon
  • 1/2 cup red onion thinly sliced
  • 1 avocado diced
  • 3/4 cup diced cherry or roma tomatoes
  • 1/2 cup crumbled feta cheese

For the Dressing

  • 3 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • 1 clove fresh minced garlic
  • juice of half a lemon
  • pinch of salt & pepper

Notes

* You can use whichever type of bacon is your favorite in this salad, but if you are interested in making homemade bacon, I highly recommend you try my homemade maple chili bacon!

*If you want to stick with the traitional flavor of a cobb salad, use crumble blue cheese instead of feta cheese.

*Cobb salad is traditionally made with a red wine vinegar but I often sub with apple cider vinegar and it is just as delicious!
