Blackened Chicken Bowls with Pineapple Salsa

These Blackened Chicken Bowls with Pineapple Salsa are one of my favorite easy and healthy meals during the summer! They take less than thirty minutes to make and are packed with flavor!

I have been on such a pineapple kick lately which means these bowsl have been on repeat. They are sweet, spicy, creamy and everything you could want in a Summer meal!

This recipe starts with smokey, blackened chicken that is cooked to perfection. You then make a simple pineapple avocado salsa that brings a sweet and fresh bite to balance out the spice in the chicken. Top it all of with some creamy feta and fresh made pickled onions for the ultimate flavor combo.

Tips For PErfect Blackened Chicken Bowls

  1. Be sure to generously season your chicken with the blackened seasoning. You do not have to worry about using too much! You want the chicken to be fully coated with seasoning on all sides. This gives you that strong blackened flavor!
  2. Cook the chicken in an air fryer or in a convection oven if you can. This is not absolutely necessary but ith these cooking methods, air is circulated all around while cooking giving you nice even juicy and crispy chicken.
  3. If you have the time, make the pineapple salsa at least 30 minutes ahead of time. This just allows times for the of the flavors and juices to really meld together and gives you even better flavor!

Blackened Chicken Bowls with PIneapple Salsa Ingredients

Chicken Thighs– You can use bonelessskinless chicken breasts or thighs for these bowls! I always prefer thighs as they are so much jucier and have more falvor.

Blackened Seasoning– This included smoked paprika, chili powder, cayenne, garlic powder, onion powder, salt, and pepper.

Pineapple- Be sure to use fresh cut pineapple, not canned.

Avocado– This adds a lovely creaminess to balance out the acidity in the pineapple.

Bell Pepper– You do not have to add pepper, but I like it for a bit of crunch in these blackened chicken bowls.

Lime Juice– Fresh squeezed lime gives the salsa a bright zesty touch.

Honey– I like to add a bit of honey whenever I do a pineaple salsa to bring a bit more sweetness.

Feta Cheese– This is optional but I love the salty touch it adds the this recipe.

Pickled Red Onions– You can use storebought or homemade.

The Steps

1.Start by making the pineapple salsa. Combine all of the salsa ingredients in a bowl and stir until well mixed. Place in the refrigerator until ready to serve.

2. Next, preheat your oven to 400F. and place the chicken thighs on baking sheet lined with parchment paper.

3. In a small bowl, mix together all of the spices from the chili powder through to the salt and pepper. Once your seasoning has been mixed, generously coat all sides of the chicken with the seasoning.

4. Place in the oven and bake until internal temp reaches 165F about 15-20 minutes.

5. Remove the cooked chicken from the pan and slice into bite sized pieces.

6. Finally build your bowl starting starting bed of rice, then a generous serving of the pineapple salsa. Lay the sliced chicken on top and finish with some crumbled feta cheese and pickleded red onions. Serve immediatley and enjoy!

Juicy and flavorful blackend chicken thighs served over a bed of rice with fresh pineapple salsa, crumbled feta and pickled red onions. Easy, healthy and so delicious!

Ingredients

  • 8 boneless skinless chicken thighs
  • 2 tsp chili powder
  • 1 tbsp smoked paprika
  • 1/4-1/2 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3/4 tsp each salt & pepper

For the Pineapple Salsa

  • 2 cups resh cut pineapple
  • 1 avocado diced
  • 1 bell pepper diced
  • 1/4 cup dice red onion
  • juice of 1 lime
  • 1/2 tbsp honey
  • pinch of salt

For the Bowls

  • crumbled feta cheese
  • pickleded red onions
  • jasmine rice

Notes

*Start with 1/4 tsp cayenne if you don't like much spice. You can increase it if you like spice!

*This recipe can be made with chicken thighs or chicken breasts. Whichever you prefer.

* These blackened chicken bowls are a great meal prep recipe to make ahead of time for the week ahead!
