This Chipotle Chimichurri Steak Sandwich is loaded with flavor and so easy to make! The perfect dinner any day of the week.

medium rare steak with bread

Everyone went crazy over my classic Chimichurri Steak Sandwich so when I made this Chipotle Chimichurri I knew it needed sandwich of its own! You can make this with any type of steak that you like. I used a venison round and sliced it nice and thin. Ribeye, tenderloin, striploin. You name it, it will be delicious on this sandwich!

I used my fresh artisan sourdough bread as the base of this sandwich, toasted it with some smoked gouda then added caramelized onions, chipotle chimichurri and fresh arugula. This flavor combo is truly out of this world.

The Chipotle Chimichurri is packed with all the tradition flavors you’d find in chimichurri with the addition of some vibrant chipotle puree and smoked paprika. The combination of the smoky chipotle with all of the fresh herbs and garlic is immaculate.

Chipotle Chimichurri Steak Sandwich Ingredients

Artisan Bread– You can use any type of bread you like but I don’t think it gets any better than fresh, chewy sourdough. Find my sourdough bread recipe here https://cmbarndominium.com/how-to-make-perfect-sourdough-bread-from-start-to-finish/

Steak– This sandwich can be made with almost any cut or type of steak you like. Beef and venison are both delicious. I used a venison round.

Smoked Gouda– Any smoked mild cheese will be delicious in this sandwich.

Caramelized Onions– I love the addition of caramelized onions in this sandwich for a touch of sweetness.

Chipotle Chimichurri– This sauce takes only a couple minutes to make and is the star of this sandwich. Find the recipe here https://cmbarndominium.com/perfectly-seared-steak-with-quick-and-easy-chipotle-chimichurri/

Arugula– Arugula adds a slight pepperiness which is delicious. You can sub with spinach if you do not like arugula.

The Steps

1. Start by seasoning the steaks with salt and pepper.

2. Heat a cast iron skillet on high heat with a couple tbsp butter or beef tallow.

3. Place the steaks in the pan and sear for a couple minutes on each side or until desired doneness. 120F for rare or 130F for medium rare. Allow the steaks to rest for 5-10 minutes before slicing thin.

4. While the steaks are resting, caramelize the onions in a pan over medium-low heat. I like to do mine with just a dab of butter and some salt and pepper.

5. Next, place the cheese on the sliced bread and broil in the oven for a couple minutes or until melted and golden.

6. Layer the sliced steak on top, followed by the chipotle chimichurri, caramelized onions and a handful of arugula. Enjoy!
