I know we are coming up on Fall, but can we just enjoy a couple final Summer recipes!!! Peach season is not quite over yet, and they are so glorious it would be a sin not to keep using them.

This BBQ Marinated Pork with Peach Basil Salsa is a healthy and vibrant meal that you can make in under 30 minutes. It starts by marinating sliced pork loin in bbq sauce over night. You then grill it to perfection and top it with a peach and roasted corn salsa full of fresh bsail. This flavor combo is what dreams are made of!

If you don’t love pork, you can absolutely make this recipe with chicken as well. It would even be delicious with salmon. Serve it up with roasted potatoes, or a fresh salad and you have a delicious filling meal you will fall in love with!

Tips for Making BBq MArinated Pork With pEach Basil Salsa

  1. Marinade the pork for at least to hours or ideally overnight. The longer the pork marinates in the bbq sauce, the juicier and more flavorfu it will be.
  2. When cooking the pork, remove it from the heat when the internal temperature reaches 145F. Pork can dry out if it gets over cooked. 145F is the recommended temperature where it will still stay nice and juicy but is cooked through.
  3. Use fresh, and ripe ingredients for the salsa. Because the salsa is so simple, you want to use peaches and avocado that are at their prime ripeness for optimal flavor and sweetness. Opt for fresh corn over canned.

Pork with PEach Basil Salsa Ingredients

Pork– This can be pork loin, pork tenderloin or even pork chops.

BBQ Sauce– Use whichever bbq sauce you like. Storebought or homemade works. If you can find a peach or apricot bbq sauce even better!

Peaches– Fresh ripe peaches that are still slighlty firm with hold up best in this salsa.

Corn– This gets roasted in the oven and adds a great charred sweet favor to the salsa.

Avocado– The addition of avocado adds a great creaminess to balance the sweetness.

Red Onion– A necessity in any fresh salsa for a it of bite.

Lemon Juice– You can use fresh lemon or lime juice in this salsa.

Basil– Fresh basil leaves are a match made in heaven with the juicy peaches.

Honey– A bit of honey finishes off the salsa perfectly.

The Steps

1.Start by adding the pork and the bqq sauce to a casserole dish or large ziploc. Move the pork around so it is all covered in the sauce. If the pork seems bare, add a bit more bbq sauce.

2. Place in the refrigerator and allow to marinate for minimum 2 hours or up to 24 hours.

3.When you are ready to cook, start by seasoning the ears of corn with a bit of oil and some salt and pepper. Place in the oven and roast at 425F for about 25-30 minutes.

4. Next, heat your grill or smoker to 425F. Once the grill/ smoker is heated, place the pork on the heat and allow to cook for 7-10 minutes before flipping.

5. Remove the pork from the heat when the internal temperature reaches 145F internal. Allow to rest for a couple minutes.

6. While the pork is resting, add the peach, avocado, red onion, basil, lemon juice and honey to a medium sized bowl.

7. Finally, cut the roasted corn off the cobb and add it to the bowl with the rest of the salsa ingredients. Add a pinch of salt and stir everything together until well mixed.

8. Serve the pork up with a generous spoonful of peach salsa on top and enjoy!

Sweet and juicy BBQ marinated pork that is served with a fresh peach, roasted corn and basil salsa. It is flavorful, nourishing and so easy to make!

Ingredients

  • 2 cups bbq sauce
  • 8 pork chops/ slices of pork loin

For the Salsa

  • 1 large peach diced
  • 1 avocado diced

  • 1/3 cup red onion diced
  • 1/3-1/2 cup fresh chopped basil
  • juice of 1 lemon or lime
  • 1 tbsp honey
  • pinch of salt

Notes

*This recipe can be made with pork chops, pork loin or even pork tenderloins.

*If you want to make the salsa ahead of tim,you can make it a day in advance and store it in the refrigerator.

*Serve this pork along side roasted potatoes, potato salad, or a garden salad.
