Classic venison Egg Rolls ( Baked not Fried)
If you like Asian cuisine, there is a good chance you like egg rolls and these venison egg rolls are a fun way to use your ground meat! They are made with wholesome ingredients, are full of flavor and are light and crispy!!

Egg rolls are such a fun and delicious way to enjoy your wild game meat! They are great for appetizers and entertaining, great for lunches and even just a weekly dinner. You can use any ground wild game meat you have like venison, moose or elk.
Most traditional egg rolls are deep fried but we don’t love fried food so this version is baked to golden crispy perfection. You start by making the filling which starts with seasoning the ground meat with spices and things like soy sauce and rice vinegar. Then you cook that up with some chopped cabbage and carrots, then wrap that up into egg rolls wrappers. Toss them in a bit of oil then bake until crispy and hot!
What I love about these is that they are full of flavor yet you still taste the meat for what it is. You can make them and freeze them for easy lunches or snacks on the go too. I promise you will love them.

Tips for Making Venison Egg Rolls
- This recipe is best made with ground meat that has some fat added to it. The extra fat helps keep it tender and juicy. We like around 15% pork shoulder added to ours.
- When filling the egg roll wrappers, you want to get them rolled nice and tight. This ensure they are full, and don’t spill out when baking.
- In order to get nice crispy golden egg rolls on all sides, make sure all the edges are coated with oil. Just enough so that the pastry isn’t dry.
Venison Egg Roll Ingredients
Ground Venison- As mentioned above you can use venison , moose, elk etc.
Egg Roll Wrappers- You can find these in the refrigerated section at most grocery stores.
Cabbage- I like a mix of both purple and green but you can use either or.
Carrots- Thinly sliced makes for the best eating experience.
Green Onion- These add a fresh and vibrant bite to the egg rolls.
Soy Sauce- Use regular or tamari.
Rice Vinegar
Sesame Oil- Measure carefully.
Maple Syrup- Just a touch to balance out the salty soy sauce.
Garlic & Ginger- Use fresh minced for both of these.
Dipping Sauce- Sweet chili sauce is delicious or you can use a hoisin sauce.

The Steps
- Preheat your oven to convection 425F. If your oven doesnt automatically lower the temperature when you turn to convection, make sure you set it to 410F.
- Start by adding the ground meat to a bowl, along with the garlic, ginger, 1 tbsp soy sauce, 1/2 tbsp rice vinegar and 1 tsp sesame oil. Stir and let that sit while you slice all the vegetables.
- Then, heat a skillet over medium heat with a tbsp of oil. Add in the meat mixture and brown until mostly cooked through.
- Dump the cabbage and carrots into the pan, followed by the remaining 1 tbsp soy sauce, maple syrup and 1/2 tbsp rice vinegar. Stir and cook for about 5 minutes.
- Finally, remove the pan from the heat and stir in the green onions.
- Take one wrapper and lay it on the counter diagonally. Add roughly 1/4-1/3 cup of filling to the center.
- Wet your finger, then run it along the edges of the wrapper.
- Fold the two outside corners in, then fold the bottom corner into the middle and roll tight.
- Repeat this process until you are out of filling, then pour a couple tbsp of a neutral oil onto a baking sheet.
- Take each egg roll and roll it into the oil so that all sides are moistened.
- Spread the egg rolls out on the ban and bake for 15 minutes, flipping halfway through. If your oven isn’t convection, they may just take a few more minutes.
- Remove from the oven, and serve dipped in sweet chili sauce or you can also do hoisin mixed with a bit of water for a sauce. Enjoy!
