They freeze wonderfully, and are great for any kind of sandwiches from Philly cheese steaks, to simple ham and cheese. If you have been looking for a sandwich roll that your whole family will be obsessed with, THIS IS IT!

Tips for Making Perfect Sourdough Hoagie Rolls
- Use a strong, active starter that has reached its peak. I recommend feeding your starter a 1:4:4 ratio for a super strong starter. It should take about 8-10 hours to reach its peak.
- After you have mixed the dough, you want to give it enough kneading. There is no stretch and folds so, kneading the bread helps develop the structure in the dough.
- Once you have shaped the rolls, give them plenty of time to get nice and puffy before baking. If they do not get enough rise time, that is where you can end up with a more dense rolls which no one wants! I say a minimum of 3 hours depending how warm your house is.
Sourdough Hoagie Roll Ingredients
Flour– Unbleached all purpose flour or bread flour is great.
Sourdough Starter- As mentioned above, use one that is fed and has reached its peak.
Olive Oil– This helps keep the buns nice and soft. Can sub with avocado oil if you like.
Salt– Any fine salt will work.
Egg Wash– Just one egg with a splash of milk gives that beautiful golden top to the rolls.

The Steps
- Start by whisking together the sourdough starter, water, and olive oil in a large bowl with a dough whisk or wood spoon.
- Then, add in the flour and salt and mix until you have a thick dough.
- Cover the bowl with a tea towel and let rest for 1 hour.
- Next, either by hand of with a stand mixer and dough hook attachment, knead the dough for 8-10 minutes until soft and smooth.
- Cover the bowl of dough with plastic rap or a damp towel and let rest for about 8 hours or until doubled in size. I like to do this over night

- Once the dough has risen, dump it onto a clean surface and cut into 5 roughly equal pieces (around 85g each or so).
- Take each peace and stretch it into a smooth ball.
- Then flip the ball upside down so the smooth side is on the counter, and press the dough into a rectangle. About 5-6 inches wide, and about 4 inches tall.

- Take the top third of the rectangle and fold it into the middle, followed by the bottom third into the middle, just slightly overlapping with the top fold.

- Press your finger down over the over lap all the way across to seal the bun, then fold both of the edges in slightly just to give you a round, smooth end.
- Once you have shaped all of the rolls, place them smooth side up, spread out onto a baking sheet.
- Cover and let rise until nice and puffy. Mine took about 4-4.5 hours but if your home is super warm it may take a bit less time.

- After the buns have risen. preheat your oven to 375F.
- Take the egg mixed with milk, and brush it over top of each bun.
- Use a sharp knife or bread lame to score a slit douwn the middle of each bun. It doesn’t need to be deep.
- Bake the buns for 22-25 minutes or until golden all over. Enjoy!
