Quick & Delicious Cowboy Venison Steak Bites
If you are looking for a super easy way to spice up your venison steak, these Cowboy Venison Steak Bites are the way to go! Juicy bites of venison steak, seared to perfection, tossed in a flavor packed cowboy butter served over smooth mashed potatoes. This recipe is meat and potatoes done right!

Cowboy butter is one of our favorite things to enjoy with venison steak. It adds such incredible flavor, and is easy to make. For this recipe, I have taken that glorious cowboy butter and tossed it with crispy seared steak bites making each bite pure heaven!
This meal is great because it tastes like a meal you spent hours slaving away at but can be made in under thirty minutes. You start by boiling some potatoes, then mashing them exactly how you like. Next, take any venison steaks of your choosing and slice them into little cubes. Season them on all sides, then sear them in a bit of butter for just 1-2 minutes per side. Once the steak is seared, set it side and make your cowboy butter in the pan. Finish it off by tossing those steak bites back in the pan with that cowboy butter and serve them over the mashed potatoes.
If you aren’t a fan of mashed potatoes, you can serve these bites over roasted potatoes, rice or even pasta!

Tips for Making Perfect Cowboy Venison Steak Bites
- When cutting the steak, try to cut the cubes so that they are even thickness all the way through. This ensures that they will cook evenly and stay juicy throughout.
- Because the pieces of steak are small, you want the pan super hot so that you can get a nice sear on them quickly so they do not over cook. When in doubt, always lean towards under cooking your venison steaks.
- After the steak is cooked, you want to make sure your pan has come down to a much lower temperature. When making the cowboy butter, you want to prevent the butter from browning, so just keep the heat on low.
Cowboy Venison Steak Bite Ingredients
Venison Steak– Any steaks that you like from deer, elk, or moose will work for this recipes.
Butter– I like to use salted but unsalted works too.
Garlic– Fresh is always best.
Onion- You can use a shallot or yellow onion that is super finely chopped.
Parsley– Fresh parsley adds a delicious freshness to the butter.
Smoked Paprika– A classic flavor in cowboy butter for a bit of smokiness.
Worcestershire Sauce– If you are gluten free be sure to use gluten free Worcestershire sauce.
Dijon Mustard– Just a touch. You want smooth not grainy.
Lemon– Fresh lemon zest and juiced the perfect acidity.
Chili Flakes– If you don’t like heat you can omit this.
Parmesan– This isn’t essential but I love to add some fresh parmesan on top before serving.

The Steps
- Start by cutting your venison steaks into roughly equal 1 inch size cubes.
- Once cut, add the steak cubes to a bowl and toss with salt and pepper or steak spice.
- Next, heat a skillet over high heat with a bit of butter or tallow.
- When the pan is nice and hot, place the steak bites in the pan, making sure they are spread out so they can all get a nice sear.
- After about 1 minute, gently flip each steak bite to get a nice sear on the other side. These will cook fast, and you do not want to over cook venison.
- Cook for another minutes or so then remove the steak from the pan.

- Turn the pan down to low heat, then add in the butter, onion and garlic.
- Allow that to cook for a couple minutes, then stir in the dijon mustard through to the chili flakes.
- Finally, turn the heat off, and toss the steak bites back in the pan with the hot butter.
- Serve over mashed potatoes, spoon some of the extra butter over top and add some fresh parmesan before serving. Enjoy!
