We love having salmon in the freezer that my husband has caught over the Summer but we tend to always make the same couple things with it. These Salmon BLT’s are such a delicious and different way to enjoy salmon! They can be made in under 30 minutes, and make great lunch or dinner.

To make these BLT’s you start by making a simple spice rub for the salmon. Spread that on top and bake the salmon until tender. While that bakes, you make a simple roasted garlic and fresh herb aioli to slather on your bread. Layer over fresh sliced tomatoes, lettuce, red onion, crispy bacon and that beautiful salmon. You can enjoy these sandwiches fresh or toasted, however you prefer.

Tips for Making Perfect Salmon BLT Sandwiches

  1. Make sure that you pull out any salmon bones in your fillet before cooking. They are very small, and can often get missed. You can use fish tweezers or any tweezers you have. Just make sure you wash them after!
  2. For cooking fish, I always recommend using an instant read thermometer. Fish can over cook really quickly, so having a thermometer will help you know exactly when the fish is done, without it getting over cooked.
  3. These sandwiches are best constructed right before eating! With all the fresh vegetables and their juices, the bread can go soggy if not eaten right away.

Salmon BLT Sandwich Ingredients

Salmon– Wild caught is best. You can use coho, chinook or any kind you have.

Bread– I like to use a classic artisan sourdough loaf, but use any bread you like.

Bacon– A nice thick cut bacon is best.

Tomato- You want a big juicy beefsteak or heirloom tomato if possible.

Lettuce- Romaine or iceberg are fine.

Avocado– I love the additional creaminess this gives the sandwich.

Roasted Garlic– A whole head of garlic is needed as it gets much more mild when roasted.

Fresh Herbs– Use a combination of whatever you like. Parsley, chives, dill, basil etc.

Mayo– This can be homemade or store bought.

Red Onion– Optional, but I love this addition.

Spices– I do a little homemade spice rub with salt, garlic, smoked paprika and brown sugar for the salmon.

The Steps

  1. TO ROAST GARLIC AHEAD OF TIME: Preheat your oven to 400F then slice the top off of a head of garlic, and peel away any excess loose layers. Drizzle olive oil over the top then wrap in foil OR place in a small baking dish, add some extra olive oil and cover with a lid. Roast for about 40 minutes or until soft.
  2. When ready to make the sandwiches, preheat your oven to 350F and slice the salmon fillet into 4 pieces, drizzle each one very lightly with olive oil.
  3. Then, stir together all of the salmon spices, and sprinkle evenly over each piece of salmon.
  4. Place the salmon on a baking sheet lined with parchment and bake for about 10-15 minutes or until internal temp reaches 125F-130F.
  5. While the salmon bakes, add the mayo to a bowl or jar, then squeeze in the roasted garlic, and add all the remaining aioli ingredients. Whisk until smooth or blend with an immersion blender.
  6. Next, take the bread and toast it lightly in the oven. Once tasted, layer on a generous spoonful of the aioli, followed by a piece of the salmon, tomato, lettuce, bacon, avocado and red onion.
  7. Place the lid on the sandwich, slice in half and enjoy immediately!
