How To Make Homemade Venison McGriddles

Venison McGriddles are a hearty, and delicious breakfast to enjoy on the weekends or to prep ahead of time for your week! They are the perfect combination of savoury and sweet and are so much healthier homemade.

If you have never heard of a McGriddle, they are a popular fast food breakfast sandwich made with pancakes, egg, sausage and cheese. It may seem a bit strange if you have never had one, but I promise it is a TASTY combo.

Around here we like to make things from scratch at home when we can to make it more nutritious. For these venison McGriddles you start with a very simple light and fluffy pancake batter. It is lightly sweetened with maple syrup and then fried into perfect little pancakes. After that, you make a delicious breakfast sausage patty with the venison, and cook up some egg with melty cheddar cheese. Pile all of that goodness together for the perfect breakfast sandwich!

I love these McGriddles because they really are the best of multiple breakfasts put into one. No more having to pick between sweet or savoury! They are packed with quality protein and are truly the perfect way to start your day.

Tips for Making Venison McGriddles

  1. I recommend using ground venison or other wild game meat that has some found ground in with it for this recipe! This will help ensure you have a juicy and tender sausage patty, full of flavor.
  2. For the pancakes, make sure your batter is not too thick. These McGriddles are best with a thinner pancake so that you really get to taste the fillings. If your batter seems quite thick after mixing, add in a touch more milk.
  3. When cooking the eggs you can do a classic fried egg if you like, but I like to scramble my eggs before cooking then fry them up more like an omelette. This gives you delicious eggs that aren’t quite as messy.

Venison McGriddle Ingredients

Flour– All purpose flour is all you need.

Ground Venison– As mentioned above, use a ground venison or any other ground wild game meat that has 10-20% fat added to it.

Cheddar Cheese– Any orange cheddar you like works.

Egg– You can do 1 or 2 eggs per sandwich. Whichever you prefer.

Milk- Whole milk or 2% will give you the best pancakes.

Butter– Salted or unsalted works.

Maple Syrup– This gives a touch of sweetness and maple flavor to the pancakes. You can also drizzle a little extra on top of the sandwich if you like.

Baking Powder– This is essential for giving you nice fluffy pancakes.

Garlic– Use fresh minced for the sausage patties.

Dried Sage– A classic component of breakfast sausage that adds delicious earthy flavour.

Chili Flakes– This is optional, but I love a dash of chili flakes in the breakfast sausage.

The Steps

  1. Start by making the pancakes, Add the flour, baking powder, salt and sugar to a bowl. Whisk.
  2. Then, whisk together the milk, butter, egg and maple syrup in a measuring cup.
  3. Once mixed, pour the wet into the dry ingredients and fold together until no dry spots remain.
  4. Heat a large skillet over medium- low heat with a dab of butter.
  5. Spoon the pancake batter into the pan, using about 1/4 cup for each pancake.
  6. Allow the pancakes to cook for 3-4 minutes or until bubbles start to surface in the batter, then flip and cook for one more minute.
  7. Remove the pancake from the heat, then wrap in foil or pop in a warm oven to keep warm.
  8. Next, add all of the sausage ingredients to a bowl and stir until combined.
  9. Form the meat mixture into 4 large patties, then place them back into that same pan over medium heat.
  10. Cook for a couple minutes each side or until internal temp reaches about 160F. Remove from the pan.
  11. Finally, add 1-2 eggs to a bowl, and whisk together with some salt and pepper.
  12. Keep the pan over medium heat, and pour in the eggs. I like to spread them fairly thin, then flip and fold them over into a somewhat square shape.
  13. Turn off the pan, place a slice of cheese on the eggs, and cover with a lid until the cheese is melty. Repeat this 4 times to make enough eggs for all 4 sandwiches.
  14. To serve, start with a pancake, then place a sausage patty on top, followed but the cooked egg and cheese.
  15. Top with another pancake and a drizzle of maple syrup if you like. Enjoy!

Sweet and scoury breakfast sandwiches made with fluffy maple pancakes, homemade venison breakfast sausage, egg and cheddar cheese.

Ingredients

For the Pancakes

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • pinch of salt
  • 3/4 cup milk
  • 2 tbsp melted butter
  • 1 egg
  • 2 tbsp maple syrup

For the Breakfast Sausage

  • 1 lb ground venison or other ground wild game meat
  • 1 egg
  • 2 cloves minced garlic
  • 1/2 tbsp dried chopped sage
  • 1/2 tsp salt & pepper
  • dash of chili flakes

Additional Toppings

  • 4 slices cheddar cheese
  • 4-8 eggs
  • salt & pepper

Notes

* You can absolutely make these sandwiches ahead of time, wrap them in plastic wrap and foil, and store in the freezer for easy breakfasts on the go.

*If you do not hunt you can make these with ground beef or ground pork.

* If you are serving a crowd or making these for meal prep, the recipe can easily be doubled.
