Fresh lemon Asparagus Sourdough Pasta Salad
When warmer months roll around I always start craving pasta salad and this Lemon Asparagus Sourdough Pasta Salad is a dream come true! It is light, fresh and bursting with flavor. A must make this Summer.

If you are like us and love pasta, then pasta salads are perfect for you when you want to enjoy pasta even on those hot Summer nights. Growing up I never liked pasta salad, but it wasn’t until I started making my own and experimenting with flavor combos that I fell in love. They are easy, nourishing and delicious!
This sourdough pasta salad starts with simple, homemade sourdough noodles, that are then mixed with summer vegetables, feta cheese and a light lemon garlic vinegarette. The sourdough pasta uses sourdough starter discard, making it a great way to use up that discard in your fridge. If you don’t make sourdough you can use any pasta you like for this recipe!
Pasta salads are an essential part of a Summer menu being that you don’t have to turn your oven on and they can be made ahead of time. We all seem to get busier during those Summer months and having a dinner we can make ahead of time and serve stright from the fridge is a dream.

Lemon Asparagus Sourdough Pasta Salad Ingredients

Asparagus– I love using aspargus in Summer recipes for its vibrant color, texture and flavor.
Artichokes– Marinated artichokes are what I recommend for this recipe as it adds a delicious layer or flavor.
Red onion– Like most salads, I recommend using red onion for its flavor and slightly more mild flavor.
Avocado– Using ripe avocado in this salad adds a really nice creamy element to it. Try not to use too soft of an avocado or it will just turn to mush once mixed.
Feta Cheese– This adds a perfect salty touch to finish off the salad. I do not recommend substituting with a different cheese, but you can ommit if you don’t do dairy.
Olive oil– My personal oil of choice for salad dressings. Avocado oil works too but I enjoy the added flavor from olive oil.
Garlic– Use fresh minced garlic over store bought always!
Lemon- This is one of the best pairings with aparagus and keeps this salad tsting nice a fresh. Ue freshly squeeze lemon juice.
Apple Cider Vinegar– I always have this on hand, but if you do not, you can substitute with a white wine vinegar.
Dijon Mustard– This adds a nice little kick to the lemon viegarette.
Chili Flakes– These are optional, but a little sprinkle into the vinegarette gives a nice little punch without being super spicy!

The Steps
1. Start by adding the chopped aspargus to a skillet with a little drizzle of oil and saute for just a couple minutes. You want to soften the aspargus slightly but still keep a bit of crunch. Set aside.
2. Next, to a small bowl or jar, add all of the dressing ingredients and whisk until smooth and well combined.
3. Add the cooked, and cooled sourdough pasta to a large mixing bowl, along with the cooked asparagus, artichokes, red onion and avocado.
4. Pour the dressing over the pasta and vegetabls and gently toss everything until its evenly coated.
5. Finish the salad off by adding in the crumbled feta and gently mixing it all together.
6. Serve this sourdough pasta salad as a side dish or serve it up with some grilled chicken as a filling and balanced meal! Enjoy!

I do not recommend using linguini stylefor past salad. * Pasta salad is great as a make ahead dish. Simply make the entrie salad and store it in the fridge for up to a couple days before enjoying!
