Easy and Delicious Venison Philly Cheesesteak Sandwich
If there is one sandwich that will make anyone happy, it is a juicy homemade Venison Philly Cheesesteak. They use minimal ingredients, are so simple to make are and taste INCREDIBLE! Great for a crowd and a family week night dinner.

Steak sandwiches are one of our favorite things to make with our wild game. The flavor combinations are endless and they make quick and easy meals. Typically we use steak cuts like backstrap, tenderloin or flat iron, but what I love about these Philly Cheesesteak Sandwiches is that you can use any roast cut for them. This makes them a great way to enjoy a roast if you want something different.
To make these Philly cheesesteaks, you simply start with a soft hoagie roll. You can use homemade or store-bought. Then, take your venison roast, or steak and sliced it super thin. Like, as thin as you can get it! Next, you caramelize some onions with garlic and green pepper, then add in the meat and fry it all together. season it up, then melt some provolone cheese over the top and pile it onto a toasted roll.
You can make these sandwiches with deer, elk, moose or beef. Any would be delicious. They are a great family meal, that kids will enjoy too and make great leftover lunches!

Tips for Making Perfect Venison Philly Cheesesteak Sandwiches
- I recommend freezing your meat for about 30 minutes before you slice it. You want it to get a bit more firm, which makes it much easier to get paper thin slices of meat.
- When cooking the meat, you want the pan nice and hot so you can sear the meat in just a minute. Because it is so thin it cooks extremely fast so you don’t want to cook it long at all.
Venison Philly Cheesesteak Sandwich Ingredients
Hoagie Rolls– These are super soft sandwich rolls you can buy or use my homemade recipe.
Venison Roast– I like to use a sirloin roast or a round roast as we usually eat up our steaks pretty fast. Cut your roast in half, then slice your strips as thin as possible against the grain.
Onion- White or yellow onion.
Garlic- Fresh minced is always the best.
Green Pepper– You can use any color pepper you like, but I like the savouriness of green peppers in this recipe.
Cheese– This is classically provolone cheese, but mozzarella works just as great too.
Worcestershire Sauce– Just a dash enhances the over all flavor.
Garlic Herb Butter– This is the secret component to taking these sandwiches over the top. Just slated butter, fresh garlic and fresh parsley.

The Steps
- Start by taking the venison and slicing it as thin as possible against the grain. This is the key to getting the meat super tender and delicious. You want the meat partially frozen when you do this to help you get those super thin strips.
- Next, heat a skillet over medium heat with a couple tbsp of oil. Add in the onion and cook for a couple minutes.
- Once the onion starts to get tender, add in the 4 cloves of minced garlic and continue to cook until the onions start to caramelize.
- While those cook, set your oven to broil, and stir together 1/3 cup melted butter, 2 cloves of minced garlic, and 2 tbsp fresh chopped parsley.
- Slice the hoagie rolls in half then spread the garlic butter on both sides. Place on a baking sheet and broil until golden.
- After the onions have caramelized, add the peppers to the pan and cook for 3-4 minutes. Remove the vegetables from the pan, then turn the pan up to high and add in the shaved meat.
- Cook over hight heat for 1 -2 minutes then turn the pan back down to medium low and add all the vegetables to the pan of the meat.
- Season with the salt, pepper and Worcestershire sauce and stir. Spread the meat flat in the pan, then lay the cheese slices over the top.
- Cover with a lid and allow the cheese to melt for a couple minutes.
- Finally, pile a serving of the cheesesteak mixture onto each toasted roll, slice in half and enjoy!
