Flaky Buttermilk Cheesy Dill Sourdough Biscuits
Spring is in full swing and these buttermilk Cheesy Dill Sourdough Biscuits are the perfect easy Spring bake! They are insanely buttery and flaky, and come together in just 30 minutes. A perfect snack, or addition to any meal.

If there is one thing I think everyone should know how to bake, it is a perfect biscuit! They can be enjoyed at any time of day, used for sandwiches and even enjoyed as dessert. The options are endless and biscuits make a great quick bread that can be made in under 30 minutes!
These cheesy dill sourdough biscuits give you the most perfect flaky and buttery layers with the addition of cheddar cheese, fresh dill and sourdough discard for extra flavor. BUT don’t sweat if you don’t have sourdough, you can make these without too. Without or without, they are absolutely delicious.
I love making these biscuits because you only need one bowl. It is a quick recipe you can have on the table in a pinch. They can be enjoyed warm with soups or stew, used for breakfast sandwiches, as a side with dinner or simply on their own with butter. You can even prep some ahead of time and store them in your freezer for quick on the go snacking too!

Tips for Making Perfect Cheesy Dill Sourdough Biscuits
- Always make sure you are using cold ingredients for biscuits. This means your butter, eggs and buttermilk should be straight from the fridge. This ensures the butter doesn’t melt too soon and will give you nice flaky biscuits.
- When mixing the dough, you want to mix it just until it starts to come together. Once that happens, you dump it onto the counter and start to create the layers.
- Finally, if you want a nice golden top, I recommend brushing the biscuits with milk before baking. This isn’t essential but makes them look beautiful.
Buttermilk Cheesy Dill Sourdough Biscuit Ingredients
Flour– All you need is all purpose flour for these.
Butter– As mentioned above you want nice cold butter. Salted or unsalted works.
Cheese– Almost any kind of cheddar you like with work. I love a nice old cheddar.
Dill– I recommend using fresh dill for the most potent and vibrant flavor.
Buttermilk– Of course you can buy this at the store, but you can also make it at home with just milk and a splash of vinegar.
Egg- Many biscuits don’t contain eggs but I think they add flavor and ensure that perfect flaky but moist texture.
Sourdough Discard– This can be active sourdough starter, sourdough discard or you can omit it and use extra flour and buttermilk.
Baking Powder– No matter what kind of sourdough starter or discard you use, you want to add baking powder to get that beautiful rise.

The Steps
- Preheat your oven to 400F and line a baking sheet with parchment paper.
- Start by whisking together the flour, baking powder and salt in a large bowl.
- Next add in the cold grated butter and stir just to get all the butter coated in the flour.
- Once that is nicely mixed, add in the cheese and dill and stir.
- Then, in a small bowl or measuring cup, whisk together the buttermilk, egg and sourdough discard if using.
- Take that wet mixture and pour it into the dry. Stir just until a dough starts to form.
- Dump the bowl of dough onto a clean surface and start folding the dough over itself to get the remaining flour incorporated and create the layers in your biscuits. You can start by gently pressing the dough flat, then folding it in half over itself.
- You want to repeat this about 4-5 times to get everything incorporated and to create many layers, before gently shaping the dough into a rectangle.
- Finally, using a bench scraper or sharp knife, but the dough into 8 pieces.
- Transfer them, evenly spaced onto the prepared baking sheet, and brush the tops of each biscuit with some milk.
- Bake for 15-17 minutes or until a nice golden brown. Remove from the oven, and if you like, brush with some melted garlic dill butter. Enjoy!
