Soft Cinnamon Swirl Banana sourdough Coffee Cake

Nothing says cozy Winter day like a warm slice of this Cinnamon Swirl Banana Sourdough Coffee Cake. It comes together in one bowl, is easy to make, and will have you completely in love!

Banana Bread has to be one of the most classic and nostalgic things to bake. It is soft, sweet, comforting and always hits the spot. However, when you mix it with a coffee cake, you get an even tastier treat that everyone will love.

This Banana Sourdough Coffee Cake starts with a tender and moist banana cake batter. It is then layered into a baking dish, with brown sugar cinnamon filling and chocolate chips. Bake this cake until golden perfection and enjoy a warm slice with a hot cup of coffee.

What I love about this coffee cake is that there is no mixer required, it comes together in one bowl, and turns out perfect every time. You can use sourdough discard in it for extra flavor or make it without! Add in some walnuts or pecans for a bit of crunch or leave it how it is. Whichever way to make it, I promise it will be a hit with everyone, including the kids!!

Tips for Making Perfect Cinnamon Swirl Banana Sourdough Coffee Cake

  1. Make sure that the refrigerated ingredients are at room temperature. This ensure that when you mix them with the melted butter, it won’t harden and clump up.
  2. When mixing your batter, you just want to mix it until there is no dry spots left. An over mixed batter will result in a cake with holes throughout. Less mixing, keeps it nice and soft.
  3. There isn’t a ton of sugar in the batter, so be sure to use nice brown bananas for added sweetness.

Cinnamon Swirl Banana Sourdough Coffee Cake Ingredients

Bananas– As mentioned above, you want to use nice over ripe bananas that have some black to them.

Butter– Salted or unsalted is fine. I always use salted.

Sourdough Discard– This adds some addition flavor BUT if you don’t bake sourdough you can make this cake without.

Eggs– You need 2 whole eggs for this cake.

Yogurt– A thick plain greek yogurt or sour cream will work.

Sugar– There is both granulated sugar and brown sugar in this coffee cake.

Flour– All you need for this cake is an all purpose flour.

Baking Powder- Because you are using sourdough discard, you still need to add a leavening agent.

Spices– A combination of cinnamon and nutmeg give that classic banana bread flavor.

Chocolate Chips- You can use semi sweet or milk chocolate. You can also omit them if you prefer no chocolate.

The Steps

  1. Preheat your oven to 350F and grease & ilne a 9″ square baking dish with parchment.
  2. Start by whisking together the first 6 ingredients, and the sour cream in a large bowl until combined. If you aren’t using the sourdough discard, then whisk in the extra banana here.
  3. Then, add in the flour, cinnamon, baking powder, nutmeg and salt. Gently fold the flour into the batter until no dry spots remain.

  1. Now, take half of the batter and spread it into the prepared baking pan.
  2. Stir together the brown sugar and 2 tsp of cinnamon, then sprinkle half of that over the layer of cake batter along with half of the chocolate chips.
  3. Finally, spread the remaining batter over top, followed by the cinnamon sugar mixture and remaining chocolate chips.
  4. Bake in the center of your oven for 40-45 minutes or until golden and the center is set.
  5. Allow the cake to cool for a few minutes before slicing and enjoying warm!

Cinnamon Swirl Banana Sourdough Coffee Cake

A perfectly soft and moist Banana Sourdough Coffee Cake, with a cinnamon sugar swirl throughout and semi sweet chocolate. A one bowl cake, that is the perfect sweet treat.

Ingredients

  • 1/2 cup melted butter
  • 1 cup mashed over ripe bananas
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup sourdough discard OR 1/4 cup of extra flour + 1/4 cup extra banana
  • 1 tsp vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 2 tsp baking powder
  • 1/3 cup plain greek yogurt or sour cream

For the Swirl

  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 2/3 cup chocolate chips

Notes

* You can also bake this cake in a round pan if you don't have a square pan.

* This recipe can be easily doubled and stored in the freezer after baking for up to a month.

* If you arent a fan of chocolate, you can skip the chocolate chips and leave as is or add in some walnuts or pecans.
