Whenever I do not know what to make for dinner but want something delicious, tacos or any kind are my go to. They are quick to make, fresh, full of protein and always hit the spot. I love these Crispy Chipotle Venison Tacos because they take your classic taco components and kick it up at notch with some addition flavours!

Making these tacos is incredibly easy. You start with some soft flour tortillas. They can be homemade (like mine) or store bought. Next, you brown up some ground wild game meat of your choice with a bunch of spice and chipotles. Finally, pile that meat into the tortillas with your choice of cheese, then pan fry until golden and crispy. Open the tacos up and pile in some homemade chipotle cream sauce, homemade pice de Gallo and fresh avocado. A meal absolutely perfect on its own.

If you want to enjoy these tacos for leftovers, simply fill the tortillas with the meat and cheese, then refrigerate. When you are ready to eat, simply fry them up in a pan, then add your toppings and enjoy.

Tips for Making Perfect Crispy Chipotle Venison Tacos

  1. I recommend starting with the lesser amount of chipotle in the meat, tasting it once it’s all cooked and then deciding if you want more spice. I don’t find the chipotle very spicy, but you can always add more, you can’t take away.
  2. When frying up the tacos, you want the pan to be warm enough so they get crispy but not too hot or they can burn quick. You want just a couple minutes a side to get a nice golden outside

Crispy Chipotle Venison Taco Ingredients

Tortillas– I love my homemade sourdough tortillas for these, but any flour tortillas you like will work.

Ground Venison– This can be deer, moose, elk, bear or beef.

Cheese– A combination of cheddar and mozzarella is my favorite but use what you like.

Sour Cream– This is the base of the chipotle cream sauce.

Chipotles in Adobo– These come in a small can. I like to blend them up before using them so you get a nice smooth paste.

Mayo– Just a touch, gives the chipotle cream sauce perfect texture.

Chili Powder– Use a mild chili powder if you don’t like a lot of spice.

Cumin– ground not seeds.

Smoked Paprika– Can sub with regular paprika if that’s all you have, but highly recommend the smoked.

Crushed Tomatoes– These add flavor and a bit of sauciness to the meat.

Lime– Fresh squeezed lime its just a touch of acidity to the cream sauce.

Toppings– Add homemade pice de Gallo, fresh avocado, guacamole or your favorite salsa.

The Steps

  1. Start by heating a skillet over medium heat with a couple tbsp of oil or butter.
  2. Add in the diced onions and cook for 1-2 minutes. Then add in the garlic.
  3. Saute for a few minutes until the garlic is fragrant and onions are tender.
  4. Then, add in the meat and brown until mostly cooked through. While the meat cooks, take the can of chipotles in adobo sauce and blend in a blender or with an immersion blender until smooth.
  5. Next, add in the crushed tomatoes, 2-3 tbsp of the chipotle puree and all the spices, then stir and cook for another 1-2 minutes before removing from the heat.
  6. For the cream sauce, simply stir together all of the ingredient in a bowl, taste and add any extra salt or chipotle until your liking.
  7. Now, take a new pan and heat it over medium heat with 1-2 tbsp oil or butter.
  8. Place on tortilla in the pan, add some shredded cheese to one side, followed by a layer of the meat and another sprinkle of cheese.
  9. Fold the empty half of the tortilla over the meat and cheese and allow the taco to cook for a couple minutes before flipping and browning the other side.
  10. Once golden and crisp remove from the pan, and repeat this process with all of the meat and tortillas.
  11. Finally, peel the crispy tacos open, and drizzle the chipotle cream sauce over the middle, and add in some fresh pice de gallo and avocado or whatever toppings you choose. Enjoy!

Notes

* If you are gluten free simply use corn tortillas instead of flour tortillas.

* If you do not hunt you can absolutely make these with ground beef.

* For leftovers, I like to store the tortillas folded with the meat and cheese inside before they have been fried to be crispy. Then when you want to eat, simply crispy them up in a pan, add your sauce and toppings and enjoy.
