We are cowboy butter obsessed in this house. I swear it can make anything taste good! Whether you add it to pasta, bread, steak on its own or this steak sandwich, it will be phenomenal.

For this Venison Steak Sandwich, you want to pick a nice soft bread of your choosing. I love using homemade sourdough focaccia but take your pick of bread. Then, you are going to sear any venison or wild game steak of your choosing. Slice that nice and thin, then pile it on warm toasted bread, slathered with cowboy butter, melty cheese and crispy onions. Your mouth better be watering by now….

If you have never had cowboy butter before you need to try it. It is made from butter, garlic, lemon, fresh parsley and bold spices like smoked paprika. A tangy, spicy and fresh sauce all in one! This venison steak sandwich is a quick and flavor packed meal that is sure to be devoured.

Tips for Making Perfect Cowboy Butter Venison Steak Sandwiches

  1. Use homemade or fresh bakery bread if you can. The bread makes a huge difference in making an insanely delicious sandwich. I love using sourdough focaccia bread for this sandwich.
  2. I recommend using all fresh ingredients for your cowboy butter. This means fresh garlic you mince yourself, fresh parsley over dried, fresh squeezed lemon juice etc. Fresh ingredients will ALWAYS give you the best flavor.
  3. When choosing the right steak for your sandwich, you want to choose something that will be nice and tender. There is nothing worse than biting into a sandwich and the whole piece of meat comes out because you can’t chew it. Backstrap, tenderloin, flat iron or sirloin are all great choices.

Cowboy Butter Venison Steak Sandwich Ingredients

Bread– Of course every good sandwich needs good bread. Use fresh if you can. My personal favorite is sourdough focaccia for this sandwich.

Venison Steak– This can be your favorite cut of venison, elk, moose or even beef if you don’t hunt.

Crispy Onions– You can buy already made crispy onions, or make them yourself! I do mine in the oven to keep it healthier.

Cheese– Almost any cheese you like will work for this sandwich. I like a mild cheese like a havarti, mozzarella, or monetary jack.

Cowboy Butter- As mentioned above, this is a butter you make full of lemon, garlic, parsley, dijon, and spices.

The Steps

  1. Start by making the cowboy butter. Add the butter through salt into a small bowl and stir until smooth. Set aside.
  2. Next, season the steaks on all sides with salt and pepper or any rub that you like.
  3. Heat a cast iron skillet over high heat. Get it nice and hot.
  4. Then add a couple tbsp of ghee, oil or tallow to the pan. Add the steaks and sear for 4-6 minutes each side or until desired doneness! Internal temp of 120F for rare, 130F for medium rare.
  5. Remove the steaks from the pan and allow them to rest while you prep the bread.
  6. Take the focaccia bread and slice it in half horizontally to give you a top and bottom.
  7. Place the bread, open side up on a baking sheet, and lay cheese on half of the pieces.
  8. Toast the bread in your oven under broil until golden, and the cheese is nice and melted.
  9. Finally, slice the steaks nice and thin and you are ready to plate.
  10. Take the plain half of the toasted bread, a slather a big spoonful of the cowboy butter on it. Follow that with a pile of the sliced steak, and a handful of crispy onions.
  11. Add the cheesy piece of bread on top and enjoy!

Juicy seared venison steak piled onto fresh focaccia bread, with mozzarella cheese, crispy onions and spiced cowboy butter.

Ingredients

  • 4 pieces of thick focaccia bread
  • 4 stekas (venison, elk, moose or beef)
  • 8 slices mozzarella or pepper jack cheese
  • crispy onions (see notes for how I make mine in the oven)
  • 1/2 cup salted butter melted
  • 2 tbsp fresh chopped parsley
  • 2 tbsp fresh minced garlic
  • juice and zest of half a lemon
  • 1/2 tsp chili flakes
  • 1 tsp smoked paprika
  • 1 tsp dijon mustard
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • pinch of salt

Instructions

Notes

* To make your own crispy onions without frying, thinly slice onions, then season with a bit of salt, pepper and garlic powder. Add a couple tbsp of flour and stir to coat. Bake them spread out in your air fryer or on convection bake in your oven at 425 until crispy!

*You can use any kind of cheese you like. I like something mild like mozzarella, havarti or pepper jack for this sandwich.

* If you don't do well with spice you can omit the chili flakes from the cowboy butter.
