Venison Smash Burger Breakfast Tacos

Breakfast tacos have to be everyone’s favorite and these venison smash burger ones are absolutely incredible. Juicy venison breakfast sausage, homemade tortillas, cheesy eggs and crispy bacon. What more could you want in a breakfast taco!

Whether you want breakfast for dinner or are looking for a delicious weekend breakfast these breakfast tacos are perfect. You can have them ready in just 20 minutes and can customize them however you like! They are high in protein and give you a balanced meal that everyone will enjoy.

To make these tacos you start by making a simple breakfast sausage mix out of any ground wild game meat you have. Then, you flatten that onto tortillas of your choosing. We love homemade sourdough tortillas. Fry that up in a skillet and it just a couple minutes they are cooked! Layer on some cheesy scrambled eggs, crispy bacon, avocado and any other toppings/ sauce you like.

I love making these tacos because they are a tasty fun way to incorporated your wild game meat into breakfast. Everyone can add their own toppings to make the tacos exactly how they like and the meat stays nice and juicy!

Smash Burger Breakfast TacoS- Ingredients

Ground Venison– You can use venison or any other ground wild game meat or even beef.

Eggs- These can be done fried or scrambled. Whichever you prefer.

Cheese– I like a nice sharp cheddar for these.

Bacon– Homemade or store bought works. I love using our homemade maple chili bacon for these.

Tortillas– You want small taco size tortillas. Sourdough discard tortillas are our favorite.

Sage– Fresh sage or dried sage works. This is what gives you that classic breakfast sausage flavor.

Garlic Powder– Just a hint.

Chili Flakes– Optional, but adds a little kick to the meat.

Toppings– Add any additional toppings you like. Avocado, jalapeƱos, salsa, hot sauce, sour cream etc.

The Steps

  1. Start my mixing together the ground venison, 1 egg, garlic powder, sage, salt and pepper. Stir to combine.
  2. Next, cook the bacon in a large skillet until desired crispiness. Remove from pan and set aside.
  3. Then, take a spoonful of the meat mixture and press it nice and thin all over one tortilla.
  4. With the skillet that you cooked the bacon in, over medium heat, place the meat tortilla meat side down. Cook for 1-2 minutes before flipping and cooking for an additional minute.
  5. Repeat this process with all of the meat and tortillas.
  6. Finally, while the tacos are cooking, whisk together the eggs with. a splash of milk and some salt and pepper. Scramble in a skillet until creamy and cooked to desired consistency.
  7. Turn off the heat and sprinkle with cheddar cheese.
  8. To serve, spoon some of the eggs onto each taco, followed by a strip of bacon and any other aditional topping you like! Enjoy!

Juicy venison breakfast sausage, cooked onto soft tortillas, piled with cheesy eggs, crispy bacon and all your favorite toppings.

Ingredients

  • 6-8 Sourdough Tortillas
  • 1lb ground venison or other wild game meat
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp salt & pepper
  • 1/2 tsp dried or fresh chopped sage
  • 8 eggs
  • splash of milk
  • 8 strips of maple bacon
  • 1/3 cup shredded cheddar cheese
  • Additional Toppings: avocado, jalapeƱos, salsa, sour cream, hot sauce

Notes

* If you do not have wild game you can make these with beef or even pork.

* Make sure you spred the meat thin and even over the tortillas so that it cooks fast and gets a little crispy.
