Easy & Delicious Venison Chow Mein
Asian dishes are some of my favorite to make with our venison, and this simple Venison Chow Mein is such a fantastic recipe! Using a handful of simple ingredients, this Chow Mein is just like take out only better for you because it is homemade.

If you have freezers full of wild game meat like us, then you probably feel guilty ordering take out. That is why I love recreating delicious take out meals at home using that beautiful meat we already have. Venison takes on Asian flavours so beautifully and this Venison Chow Mein will be a hit with the whole family.
This recipe starts by slicing your venison nice and thin. Next you mix it with a bit of cornstarch and baking soda to help get it nice and tender. While that sits, you cook up the vegetables and make a simple sauce full of umami flavours like oyster sauce and mirin. Finally, you cook up some noodles and quickly fry then venison, then toss it all together with that delicious sauce! It is such an easy meal.
I like to use egg noodles when I make this as I don’t love the ingredients in tradition chow main noodles. Use whichever you prefer. This meal is super kid friendly as it doesn’t have any spice to it, but if you like a bit of heat (like my husband) you can serve it up with some chili crunch oil on top! Use deer, elk, moose or even beef and you have a tasty take out meal right at home.

Tips for Making Perfect Venison Chow MEin
- Once you have mixed the venison with the baking soda and corn starch, give it a good 20 minutes to marinade. This really helps give you super tender meat in every bite.
- Anytime you are cooking venison in thin strips like this, it cooks extremely fast. You only need to cook it for 1-2 minutes. I like it to still be a bit pink so that the meat is not overcooked and stays juicy.
- Chow Mein has a subtle but delicious umami flavour. I recommend tasting it before serving, and if you like a little bit more kick you can add in some chili flakes or serve it will chili crunch oil to make it just how you like.
Venison Chow Mein Ingredients
Venison– You can use any kind of round, or sirloin or steaks. Slice nice and thin against the grain.
Noodles– This can be classic chow main noodles, or I like to use egg noodles (what is pictured)
Carrots– Slice them nice and thin.
Cabbage– I like Napa cabbage but any green cabbage will work.
Green Onions– Chop these into chunks for nice bold flavor bites.
Soy Sauce– Regular or tamari works.
Oyster Sauce– This does contain a bit of wheat, so this recipe cannot be fully gluten free.
Mirin- Adds a delicious depth of flavor and touch of sweetness.
Garlic– Fresh is always best.
Honey– Can sub with sugar if you prefer.
Broth– Just a bit of beef or vegetable broth.
Cornstarch– Gives the sauce perfect consistency to stick to the noodles well.
Baking Soda- Helps tenderize the meat.
Sesame Oil- It is strong, so you just need a little bit!
Sesame Seeds- Optional, but love the bit of crunch and extra flavor for topping.

The Steps
- Start by taking your roast or steaks, and slicing them super thin against the grain.
- Once fully sliced, add the meat to a bowl along with the soy sauce, cornstarch, baking soda and olive oil.
- Mix everything together well with your hands or a spoon. Let the meat sit for about 20 minutes while you get everything else ready.
- Next, simply add all of the sauce ingredients to a bowl or measuring cup and whisk until combined. Set aside.
- Then, add the carrots, cabbage and garlic to a large skillet with a tbsp of oil. Cook over medium heat until tender about 5 minutes.
- Once cooked, remove the vegetables from the pan.
- Now, get your noodles boiled according to the instructions on the specific noodles you are using.
- Finally, heat the skillet back up to high heat, with a drizzle of oil.
- Once nice and hot, add in the meat and cook for just 1-2 minutes. It’s best if there is still a bit of pink in the meat so you know it is not over cooked.
- Turn the pan down to low heat, then add in the cooked vegetables, the cooked noodles, green onions and the sauce.
- Stir everything together to get it well combined, and allow everything to heat back up again.
- Once hot, serve immediately topped with toasted sesame seeds and some chili oil if you like a little bit of spice. Enjoy!
