Baked Crumble Peaches with Honey Vanilla Ice Cream

I think it is safe to say we are all obsessed with peach season and these Baked Crumble Peaches are an easy and delicious recipe to try for a little treat! Serve them up with homemade honey vanilla ice cream for a dreamy Summer dessert.

We love any fruity dessert in this house that is made with wholesome ingredients and tastes like a treat! These baked crumble peaches are just that. A handful of simple ingredients, that come together with little effort and fill that craving for a sweet treat.

I love these baked peaches because they can be whipped up in just a couple minutes, then can bake while you enjoy dinner. You start by slicing some ripe peaches in half. Then, mix together a buttery oat and brown sugar crumble topping. Layer that on top of each peach half, then baked until juicy and golden. I love to serve these with my simple homemade honey vanilla ice cream for a dreamy combination. It is made with nourishing ingredients, and sweetened completely with honey….an absolute dream.

This recipe is great if you want a simple dessert to make for the family on a week night or for a make ahead dessert for hosting. You can fully prep the peaches with the crumble topping before hand and simply place them in the oven whenever you are ready to enjoy!

Tips for Making Perfect Baked Crumble Peaches

  1. Use nice ripe peaches. The riper they are, the higher the sugar content which makes for a nice juicy and tender bake peach.
  2. When making the crumble topping, you want to use cold butter. If the butter is too soft, it doesn’t stay in little pieces to give you that nice buttery crumble texture.
  3. This recipe can make 6-8 peach halves depending how much crumble topping you want. If you like a little more, make 6, but if you prefer a light topping use 8.

Baked Crumble Peaches with Honey Vanilla Ice Cream Ingredients

Peaches– As mentioned above you want to use nice ripe peaches for ultimate sweetness.

Butter– I like salted, but unsalted works too.

Oats- Whole rolled oats.

Flour– You can use all purpose flour or 1 to 1 gluten free flour.

Brown Sugar– I keep my crumble on the less sweet side but increase the sugar if you like it more sweet.

Cinnamon– Just a touch for some warm spice in the crumble.

Cream– Use heavy cream for the most creamy ice cream.

Milk- Whole milk is best.

Honey- I use raw honey, but use whatever is your favorite honey.

Egg Yolks- These give that classic custard ice cream flavor/ texture.

Vanilla- This can be vanilla peanut butter seeds from a pod, vanilla bean paste or vanilla extract.

The Steps

  1. Start by prepping the ice cream. Place the egg yolks in a medium size bowl and whisk.
  2. Then, add the cream, milk, honey, salt and vanilla to a pot over medium low heat. Stir, and heat just until it is hot to the touch but not boiling.
  3. Remove the pot from the heat and slowly whisk the cream mixture into the egg yolks, whisking constantly.
  4. Once the egg yolks are well mixed into the cream, leave the bowl to cool for about 20 minutes, then cover and refrigerate for a couple hours or up to over night. You just want to make sure it gets nice and cold.
  5. For the peaches, take the peach halves and spread them out skin side down on a baking sheet.
  6. Then, stir together the flour, oats, brown sugar, and cinnamon in a small bowl.
  7. Take the cold butter and cut it into small cubes, then cut it into the flour mixture using a pastry blender, 2 forks, or your hands until you have a nice thick crumble.
  8. Once your crumble is made, spoon it on top of each peache half. I like to press it down into the peaches a bit, so that I can fit lots of crumble on top of each one.
  9. Bake the peaches at 350F for about 30-35 minutes or until golden and juicy.
  10. While the peaches bake, add the ice cream mixture to your ice cream machine of choice (ninja creamy, an ice cream machine, or the kitchen aid attachment like I use)
  11. Churn the ice cream for about 25 minutes or until it is nice and thick.
  12. Once the peaches have finished baking, serve them up warm with a scoop of the honey vanilla ice cream and enjoy!

Ingredients

  • 3 peaches cut into 6 halves
  • 1/2 cup all purpose or Bobs Red Mil 1 to 1 gluten free flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/3 cup cold butter

For the Honey Vanilla Ice Cream

  • 1 1/2 cups heavy cream
  • 1 1/2 cups whole milk
  • 1/2 cup honey
  • 3 egg yolks
  • 2 tsp vanilla extract or vanilla bean paste
  • pinch of salt

Notes

* This recipe can easily be doubled or tripled if you are feeding a crowd!

*If you want to prep these ahead of time, simple add the crumble to the peaches, then cover them and place in the refrigerator until you are ready to bake them. I recommend bringing them to room temperature before baking.
