Sweet Chili Venison with Fried Rice
We love takeout but we love it even more when it is made at home with better ingredients and this Sweet Chili Venison with Fried Rice is one you need to try! It is easy to make, sweet, a little spicy and delicious. The perfect take out but made at home.

I love finding ways to make some of our favorite meals at home with better ingredients. Whether it’s homemade ramen, homemade pizza or Chinese food! What is even better is getting to make those things with all the wild game meat in the freezer. If you have tried my Venison & Broccoli you will love this one too.
This Sweet Chili Venison is easy to make and works with many different cuts of venison or large wild game. You start by slicing the meat thin, then it sits in a baking soda coating to tenderize. After that, you make a simple homemade sweet chili sauce made with no refined sugar. Fry up the sliced meat in a skillet and coat it in that sticky sweet chili sauce.
For this dish I have it served with a delicious and simple homemade fried rice, but you can serve it over plain rice of even noodles. It makes great leftovers and is a fun new way to enjoy your wild game.

Tips for Making Sweet Chili Venison and Fried Rice
- Make sure you slice the meat nice and thin. Because this recipe is a great way to use up some of the tougher cuts of meat, you want to make sure it is nice and thin to make it more tender.
- When cooking the meat you want to cook it over high heat so it cooks really quick! It should only take about a minute per side. Just like with any wild game, if you over cook it, it will be more tough.
Sweet Chili Venison and Fried Rice Ingredients
Venison– I like to use a round roast and slice it nice and thin, but you can make this with any cut of steak you like.
Sweet Chili Sauce– This recipe has a homemade one made with honey, garlic, rice vinegar, soy sauce and chili flakes.
Baking Soda– A key part in helping get the meat nice and tender.
Cornstarch – You can use regular or sub with arrowroot starch.
Rice- I like to use day old rice for fried rice, but fresh also works.
Carrot– Chop this nice and small.
Peas– Frozen peas is all you need.
Onion– White onion and fresh green onion.
Soy Sauce– This can be regular or tamari if you are gluten free.
Garlic– Fresh minced garlic is always best.
Eggs– Scrambled eggs are a classic component or fried rice.


The Steps
- Start by taking the thinly sliced meat and mixing it in a bowl with the baking soda, 1 tbsp cornstarch, 1 tbsp water, 1 tbsp oil and a pinch of salt.
- Mix well until evenly coated, then set aside to tenderize while you make the sauce.
- For the sweet chili sauce, add the honey, 3/4 cup water, rice vinegar, red pepper flakes, garlic and soy sauce to a pot. Place over medium heat and let simmer for 2-3 minutes.
- Then, take the 2 tbsp of cornstarch and water, stir together and pour this slurry into the sauce. Stir, and let simmer for 1 more minutes to thicken, then remove from the heat.
- To make the fried rice, start by scrambling the eggs in a large skillet with a pinch of alt and pepper. Once scrambled remove from the pan.
- Add a couple tbsp of oil to that same pan, followed by the white onion, garlic, carrot and peas. Cook until the vegetables are tender, about 4-5 minutes.
- Next add in the cooked rice, and soy sauce, and stir well.
- With the pan over medium heat, add 1 tbsp of butter to the rice, stir it well, then let the rice cook spread out for a couple minutes to get lightly crisp on the bottom.
- Remove the rice from the heat, then stir in the scrambled eggs and sliced green onion.
- Finally, heat a skillet over medium high heat with 1–2 tbsp of oil. Add in the strips of meat and fry for roughly 1 minutes per side.
- Pour the sweet chili sauce over the cooked meat, stir together until coated then remove from the heat.
- Spoon a serving of rice into each bowl, then serve with some sweet chili venison on top. Enjoy!

Sweet and slightly spicy Sweet Chili Stir Fried Venison served over a bed of homemade fried rice. * To make this fully gluten free simply sub the soy sauce for tamari. * If you are using a bigger cut of meat like a round roast, I like to slice it in half lengthwise then cut into thin strips. * The sauce isn't too spicy, but if you want to make it mild, you can cut the red pepper flakes in half.
