The Best Homemade S’Mores (gF or regular)
S’more season is here and you need to try making homemade S’mores this year! They are easier than you might think and can be made gluten free too.

If there’s one thing that everyone thinks of when it comes to Summer it is S’mores! They are so nostalgic and are the perfect treat to enjoy around the campfire. That being said, they are typically made with garbage ingredients if you are using store bought components.
I have taken the classic treat and made it better for you and more delicious using ingredients at home. You can make the graham crackers gluten free or with regular flour and use any kind of chocolate you like.

Tips for Making Homemade S’mores
- Make sure you do not store the sugar and syrup while it’s boiling. Just let it do its thing. Stirring can result in the sugar crystallizing which you do not want.
- When making the marshmallows, you want the mixture to be whipped until it is thick and glossy but not too stiff. You should still be able to spread it into a pan.
- For the graham crackers, you want the dough to be chilled so that they hold their shape more as they bake. The dough won’t take that long to chill. Only about 45 minutes to an hour.
Homemade S’more Ingredients
Gelatin– Use whichever plain gelatine brand is your favorite.
Maple Syrup– This goes in the marshmallows for enhanced flavor.
Sugar– You will need brown sugar and granulated sugar.
Butter– I always use salted but unsalted works too.
Flour- You can use all purpose flour OR Bobs red mil 1 to 1 gluten free flour.
Oat Flour- This helps give you the perfect texture and additional flavor.
Honey– A must for that classic graham cracker flavor.
Cinnamon– Also an essential for the graham cracker taste.
Vanilla– This enhanced the flavor in the marshmallows.
Cornstarch– Can use cornstarch or arrowroot starch.

The Steps
- Start by whisking together the flour, baking soda, baking powder, salt and cinnamon in a medium sized bowl.
- Next, add the butter, brown sugar, honey and vanilla to a bowl of a stand or electric mixer. Beat with a paddle attachment until light and fluffy, about 3 minutes.
- Then, slowly mix in the flour mixture. Beat until combined.
- Take the dough, and press it all together into a ball, then flatten it into a square on a piece of plastic wrap.
- Cover, and place in the refrigerator to chill for 45-60 minutes.
- While that chills, add 1/2 cup of cold water and 2 tbsp of gelatin to a bowl of a stand or electric mixer. Whisk to combine, then let sit for about 5-10 minutes.
- Next, add the maple syrup, sugar, salt and 1/4 cup cold water to a small pot. Heat over medium heat until the sugar dissolves, then increase the temperature slightly and let it boil until the temp reaches 240F.
- Once the mixture has reached temperature, remove from the heat and slowly pour into the gelatine mixture with mixing on low speed.
- After it is all combined, turn the mixer up and beat for about 8 minutes until thick and glossy but still spreadable.
- Grease and line a 9″ baking dish with parchment, then spread the marshmallow mixture into the pan.
- Sprinkle the top with the cornstarch/icing sugar then let set while to bake the graham crackers.
- Preheat your oven to 350F, then unwrap the dough and place it on a sheet of parchment paper.
- Roll the dough out into a square until it is about 1/4 inch thin.
- Then using a knife or pizza cutter, trim the rough edges to get a nice square, then cut the dough into large squares.
- Lift the crackers onto a baking sheet, with the parchment, gently spread them out slightly, then prick each one with a fork.
- Bake for 12-15 minutes of until just starting to get golden on the edges. Allow them to cool while you slice the marshmallow into 9-12 squares.
- Finally, take a graham cracker, place a couple pieces of chocolate on top, followed by one of the marshmallows toasted, and place another graham cracker on top. Enjoy!
